Time 1h30m

Number Of Ingredients 6

3 cups granulated sugar
1 cup light corn syrup
1/2 cup water, divided
1 1/2 teaspoons peppermint extract
1 teaspoon red gel food coloring
Optional: 1 teaspoon white gel food coloring

Steps:

  • Pour remaining 1/4 cup water into a small bowl and use it to wet a pastry brush .
  • Repeat this process for 2 to 3 minutes, until candy takes on an opaque color and a satiny finish. At this point, the candy will be warm-you should have some trouble pulling and folding it.
  • Pull and fold the candy in the same fashion, until it becomes opaque, glossy, and difficult to manipulate.
  • Stretch candy again. This step will determine the thickness of your candy canes-you can make thinner ones (with a 1/4-inch diameter) or thicker ones (with a 1/2-inch diameter).
  • Cut off another segment from each log, returning the remaining logs to the oven, and repeat the twisting and stretching process until you have used up all the candy.

Tips:

  • Use a candy thermometer to ensure the sugar syrup reaches the correct temperature. This will help prevent the candy from being too hard or too soft.
  • Stir the sugar syrup constantly to prevent it from crystallizing.
  • If the sugar syrup starts to crystallize, remove it from the heat and stir in a few drops of lemon juice or cream of tartar. This will help to dissolve the crystals.
  • Add the flavoring and coloring to the sugar syrup after it has been removed from the heat. This will help to prevent the flavoring and coloring from burning.
  • Work quickly when shaping the candy canes. The candy will start to harden as it cools, so you need to work quickly before it becomes too difficult to shape.
  • If the candy becomes too hard to shape, you can reheat it in the microwave for a few seconds to soften it.
  • Store the candy canes in an airtight container at room temperature. They will keep for up to two weeks.

Conclusion:

Peppermint candy canes are a classic holiday treat that can be easily made at home. With a few simple ingredients and a little bit of time, you can create delicious and festive candy canes that will be enjoyed by friends and family alike. So grab your candy thermometer and get started!
