Categories     Everyday Cooking

Time 35m

Yield 2

Number Of Ingredients 4

2 (8 inch) flour tortillas
1 tablespoon vegetable oil
2 oven-safe ramekins, about 4 inches in diameter
Aluminum foil

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Brush both sides of tortilla with oil.
  • Invert ramekin on a work surface; center tortilla on the bottom of the ramekin. Gently shape the tortilla down around the sides. Place a double layer of aluminum foil over the tortilla and press to form the bowl around the ramekin. Place right side up on a baking sheet and leave about 1/2 inch of the edge of the tortilla above the foil so it gets browned and crispy when you bake it. Repeat with the second tortilla.
  • Place baking sheet in preheated oven for 5 minutes. Remove sheet from oven and use tongs to carefully remove the ramekins from inside the shells. Transfer sheet back to the oven. Bake shells until lightly browned, about 5 minutes. Remove baking sheet from oven.
  • Carefully remove foil from around the shells; reserve the foil. Flatten foil sheets and invert shells on them. Bring foil up just around the bottom of the shells to protect the top edge.
  • Transfer sheet back to the oven. Bake until browned and crispy, 8 to 10 minutes. Remove sheet from oven and invert the shells once again so they are right side up. Place on foil and transfer sheet back to oven for the final crisping, 3 to 5 minutes. Watch them carefully so they don't burn.
  • Remove sheet from oven; transfer basket burritos to a rack to cool completely.

FLOUR TORTILLAS

Flour Tortillas image

Follow this homemade tortilla recipe to make tortillas that are perfectly fluffy, pliable, and elastic-ideal for making the best burritos you've ever had.

Provided by Alan Delgado

Yield Makes eight 10" tortillas

Number Of Ingredients 5

3⅓ cups (417 g) unbleached all-purpose flour, plus more for surface
1 Tbsp. Diamond Crystal or 1¾ tsp. Morton kosher salt
1 tsp. baking powder
1 tsp. baking soda
6 Tbsp. lard or vegetable shortening, melted

Steps:

  • Whisk 3⅓ cups (417 g) unbleached all-purpose flour, 1 Tbsp. Diamond Crystal or 1¾ tsp. Morton kosher salt, 1 tsp. baking powder, and 1 tsp. baking soda in a medium bowl to combine. Using your hands, work in 6 Tbsp. lard or vegetable shortening, melted, until incorporated and mixture looks crumbly. Pour in 1 cup plus 2 Tbsp. hot water (about 100°F) and mix well.
  • Transfer dough to a surface and knead until it comes together and springs back slowly when pressed, about 5 minutes. Wrap dough in plastic and let rest at room temperature at least 1 hour, or chill up to 12 hours (preferable). If chilling, let dough sit at room temperature 1 hour before making tortillas.
  • Unwrap dough and divide into 8 equal pieces (about 99 g each if you have a scale). Working with 1 piece at a time, pull edges of dough up and into center, then rest a cupped hand over dough so your palm and fingers enclose it and slowly work your hand in a circular motion on the counter to shape dough into a ball. Cover balls with plastic wrap to keep from drying out and let rest 30 minutes.
  • Working one at a time, roll out each ball of dough on a lightly floured surface, dusting lightly with more flour if needed (use as little as possible) to 11"-12" rounds (they should be thin enough that you can see the counter through the dough).
  • Heat a comal or large cast-iron or nonstick skillet over medium-high until smoking. Working one at a time, cook tortillas until charred in spots and bubbles form on surface, 10-15 seconds. Flip and cook until charred in spots on second side, about 10 seconds. Stack and wrap in a kitchen towel to keep warm as you go.

Tips:

  • Choose the right tortillas: You want sturdy tortillas that won't break or tear when you're shaping them. Corn tortillas are a good option, as they're less likely to stick to the pan than flour tortillas.
  • Heat the tortillas properly: Before you start shaping the tortillas, make sure they're warm and pliable. You can heat them in the microwave for a few seconds, or in a skillet over medium heat.
  • Use a nonstick skillet: This will help to prevent the tortillas from sticking to the pan and tearing.
  • Shape the tortillas carefully: Use your hands to gently press the tortillas into the desired shape. Don't press too hard, or the tortillas will tear.
  • Bake the tortillas until they're crispy: The baking time will vary depending on the thickness of the tortillas. Bake them until they're golden brown and crispy.

Conclusion:

Making tortilla bowls at home is a fun and easy way to add a festive touch to your next party or meal. With just a few simple ingredients and a little bit of time, you can create delicious and unique bowls that are perfect for serving your favorite fillings. So next time you're looking for a fun and easy appetizer or snack, give these homemade tortilla bowls a try. You won't be disappointed!
