2 tablespoons milk
2 tablespoons honey
1/2-1 tablespoon oil
1 banana, sliced (or mashed)

Steps:

  • Whisk eggs, milk & honey until combined.
  • Heat oil in a pan, pour in egg mixture & sprinkle with banana.
  • Cover pan & cook on moderate heat until underside is browned.
  • Place pan under a hot grill (broiler) to cook the top and serve.

2 cups water
1/4 cup mashed bananas
1/8 teaspoon vanilla
1 cup diced banana
1 egg
2 tablespoons honey
3 cups whole wheat flour
1/2 tablespoon baking powder
12 ounces fat-free cream cheese
3 teaspoons carob powder
1 teaspoon vanilla
12 ounces fat-free cream cheese
1 teaspoon beet powder
1 teaspoon vanilla

Steps:

  • Preheat oven to 350 degrees. Mix wet ingredients thoroughly. Combine dry ingredients in separate bowl, mix thoroughly. Add wet ingredients to dry and mix well. Pour into 8-inch non-stick cake pan sprayed with non-stick cooking spray. Bake for 1 hour to 1 hour and 15 minutes or until toothpick inserted in center comes out dry.

I created this recipe one day out of desperation. We had invited guests for dinner, and about a half hour before they were due to arrive, I realized I had forgotten all about preparing a dessert! I discovered I had plenty of bananas on hand, so I "fancied" them up and baked them. It was a big hit! 2 medium firm bananas, sliced
1 tablespoon butter, melted
2 teaspoons honey
1/2 teaspoon lemon juice
1/4 cup sweetened shredded coconut, toasted
1/4 cup chopped pecans, toasted
Whipped topping

Steps:

  • Place the bananas in a greased 1-qt. baking dish. Combine the butter, honey and lemon juice; drizzle over bananas. Bake, uncovered, at 350° for 10-12 minutes or until heated through. Sprinkle each serving with coconut and pecans; top with a dollop of whipped topping.
