1 large strip lemon rind
6 cups water
1/3 cup honey, eyeball it
1 lemon, juiced
4 camomile or other tea bags

Steps:

  • Slice the ginger into coins. Heat the ginger, lemon rind, water and honey to a boil in small pot. Add lemon juice to hot water and transfer to a tea pot. Add tea bags to pot and steep. Remove bags and serve tea.

¾ cup brown sugar
¼ cup grated ginger root
3 tea bags
2 lemons, juiced
3 tablespoons honey

Steps:

  • Stir water, brown sugar, and grated ginger root together in a saucepan; bring to a boil, reduce heat to medium-low, and cook at a simmer for 20 minutes.
  • Remove saucepan from heat and add tea bags; steep tea to desired strength, 3 to 5 minutes. Remove and discard tea bags.
  • Stir lemon juice and honey into the tea; strain into a pitcher.

2 3/4 cups all-purpose flour
1 tablespoon ground ginger
2 teaspoons ground cinnamon
1 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon ground cloves
1/4 teaspoon nutmeg
1 1/2 cups quaker quick oats or 1 1/2 cups old fashioned oats, uncooked

Steps:

  • To make mix:.
  • In large bowl, combine flour, ginger, cinnamon, baking soda, salt, cloves and nutmeg; mix well.
  • Add oats; mix well. Transfer to resealable plastic bag, an unbreakable decorative jar with lid or other airtight container. Store in cool dry place. A quart canning jar is most commonly used. If using a jar, cut out a square or circle of pretty fabric with pinking shears and place over jar lid, tie with a pretty ribbon or raffia.
  • Attach a gift tag with the following mixing and baking instructions:.

  • 1/2 pound (2 sticks) butter, softened (no substitutions).
  • 3/4 cup honey.
  • 1 large egg.

  • Add remaining cookie mix; beat well.
  • Divide dough into thirds; place each on a piece of plastic wrap and flatten to 1/2-inch thickness.

  • Heat oven to 350°F Remove one portion of dough from refrigerator. Shape dough into 1-inch balls. Place 2 inches apart on ungreased cookie sheets. Flatten to 1/8-inch thickness with bottom of glass dipped in granulated sugar. Repeat with remaining dough.

Also, I've been playing around with the amount of sugar, I like the sweetness with just 1/2 cup sugar, some suggest no sugar at all. If you don't care for the residue in the bottom of your cup, you can strain the mix with a fine sieve. Food for thought. Note 12-21-12 (I want to thank the gal that just reviewed The Chai Tea.... she used it in her K coffee machine by just running hot water into the cup, perfect temperature for the tea mix)
