I saw Giada from Food Network make this and it looked so delicious I had to try it, and it was FANTASTIC! The directions on the FN site do not say to lay the twine in the pan FIRST, THEN add the roast, then the bacon. But this is how she did it on the show and it looks much easier to tie it up that way. I also double the garlic as we love garlic. I hope you try this for any special occasion. Time does not include resting time.

1/4 cup Dijon mustard
2 tablespoons whole grain mustard
2 tablespoons honey
2 garlic cloves, minced
2 tablespoons chopped fresh rosemary leaves
1 (3 1/2 lb) center-cut boneless, pork loin roast
12 slices bacon (about 1 pound)

Steps:

  • Special equipment: kitchen twine.
  • Put an oven rack in the lower 1/3 of the oven. Preheat the oven to 350 degrees F.
  • In a small bowl, add the Dijon mustard, whole-grain mustard, honey, garlic, and rosemary and mix together until smooth.
  • Arrange the pork in a 9 by 13-inch baking pan and spread the mustard mixture evenly over the pork.
  • Starting on 1 side, lay a piece of bacon, lengthwise, on the pork. Lay another slice of bacon on the pork making sure to slightly overlap the first piece. Continue with the remaining bacon, until the pork is fully covered in bacon.
  • Using 3 pieces of kitchen twine, secure the bacon in place.
  • Roast for 1 hour. Cover the pan, loosely, with foil and roast for another 10 to 20 minutes until an instant-read thermometer inserted into the thickest part of the pork registers 160 degrees F.
  • Remove the pan from the oven and transfer the roast to a cutting board. Cover the pan with foil and allow the pork to rest for 20 minutes.
  • Remove the kitchen twine and slice the pork into 1/2-inch thick slices.

¼ cup honey
2 tablespoons Dijon mustard
2 tablespoons black pepper
½ teaspoon dried thyme, crushed
½ teaspoon salt

Steps:

  • Preheat oven to 300 degrees F (150 degrees C). Score 1/2 inch slits in your roast and place in baking dish.
  • Combine honey, mustard, pepper, thyme, and salt in small bowl; mix until well blended. Brush mixture over roast, working well into slits.

1-1/2 cups beer or ginger ale
1 cup Dijon mustard
2/3 cup honey
1/2 cup olive oil
16 garlic cloves, minced
1/2 cup minced fresh rosemary, or 4 teaspoons dried rosemary, crushed
1 boneless pork loin roast (2 to 2-1/2 pounds)
1/2 cup heavy whipping cream

Steps:

  • In a small bowl, combine the beer, mustard, honey, oil, garlic and rosemary. Pour half into a large resealable plastic bag; add the roast. Seal bag and turn to coat. Refrigerate for at least 2 hours. Cover and refrigerate remaining marinade., Drain and discard marinade from pork. Place roast on a rack in a roasting pan. 2kg pork loin bone in, fat scored
1 tbsp olive oil
100ml hot chicken stock
1 tbsp wholegrain mustard
1 tbsp clear honey
1 tsp finely chopped thyme leaves

Steps:

  • Heat oven to 240C/220C fan/gas 9. Pat the pork all over with kitchen paper. Lightly rub all over with oil and sprinkle liberally with salt. Cook for 20 mins, turn down the oven to 190C/170C fan/gas 5, then cook for 30 mins per 500g (about 2 hrs). Remove from the tin, place on a serving plate and loosely cover with foil.
  • Pour off excess fat from the tin. Add stock to the tin, then stir to incorporate meat juices and sticky bits at the bottom. Pour through a sieve into a small pan. Add mustard, honey and thyme, plus juices from the resting meat. Stir and simmer for 5 mins until starting to turn syrupy. Serve alongside the pork.

3 -4 lbs pork loin
2 tablespoons seasoning salt
1/2 cup prepare honey dijon mustard
1/4 cup honey
1/2 cup half-and-half cream
1/2 teaspoon kosher salt
2 tablespoons pork roast drippings (strained and skimmed of fat)
1 tablespoon cornstarch

Steps:

  • Pork Loin Roast:.
  • Pre Heat oven to 250.
  • Rub pork loin with seasoning salt.
  • bake for 1 hour, then turn up temp to 350 and bake for another 30 minutes, or until internal temp hits 140.
  • When roast hits 140, remove from oven and wrap in foil and let rest for at least 15 minutes.
  • Honey Mustard Sauce:.
  • While pork is resting, add mustard, honey, salt and half & half to a sauce pan and bring to a simmer.
  • Make sure the the roast drippings have cooled enough to handle and that all the chunks are skimmed out. Stir in the cornstarch.
  • Whisk in half of the starch slurry to simmering sauce. Stir until sauce thickens. Add more slurry if sauce is not thick enough.
