Steps:
- Preheat oven to 425 degrees. Slice Golden Delicious apples and 3 Granny Smith apples into sixths.
- In a large skillet over medium-high heat, bring 1/4 cup honey to a boil. Let simmer about 2 minutes, until honey is caramelized. Add 3 thyme branches. Arrange half the apples in a single layer in skillet. Sprinkle 2 tablespoons butter over apples. Cook apples, turning, until well caramelized on all sides (but not cooked through), about 10 minutes. Scrape apples and honey mixture into a bowl. Add tapioca and toss to combine. Repeat cooking process with remaining honey, thyme, butter and sliced apples. Add second batch of apples to bowl; combine. Discard all thyme branches.
- Thinly slice remaining Granny Smith apple and add it to bowl. Stir in sugar, ginger and salt.

- Bake for 15 minutes; reduce heat to 350 degrees and continue baking until crust is dark golden and apples are tender when pricked with a fork, about 45 minutes more. Let cool for 30 minutes before slicing.

Steps:
- Melt butter with thyme and let stand until ready to use.
- Preheat oven to 350°F with rack in lower third.
- Peel off and discard any rind or skin from ham, leaving 1/4 inch of fat on ham. Score fat on top of ham in a crosshatch pattern without cutting into meat. Put ham on a rack in a large roasting pan. Cover ham with parchment paper, then cover roasting pan with foil. Bake 1 3/4 hours.
- Meanwhile, boil vinegar in a small saucepan until reduced to about 1 tablespoon. Remove from heat and whisk in honey, Worcestershire sauce, and thyme butter. Let honey glaze stand until ham has baked 1 3/4 hours.
- Discard foil and parchment from ham. If there is no liquid in roasting pan, add 1 cup water (liquid will prevent glaze from burning in pan). Brush ham with half of honey glaze, then bake, uncovered, 30 minutes.
- Brush with remaining glaze and bake until glaze is deep golden-brown and ham is heated through, about 30 minutes more.
Tips:
- Use thyme's aromatic leaves. Strip them off the stem and chop them finely before stirring them into the butter.
- Soften the butter beforehand. If the butter is too hard, it will be difficult to mix with the other ingredients and may result in a lumpy texture.
- Honey adds a touch of sweetness. It also helps to balance out the savory flavors of the thyme.
- Use fresh lemon juice. It will add a bright, citrusy flavor to the butter.
- Salt and pepper are essential seasonings. They help to enhance the flavors of the other ingredients and create a balanced flavor profile.
- Chill the butter before serving. This will help it to firm up and make it easier to spread.
Conclusion:
Honey thyme butter is a versatile and delicious spread that can be used in a variety of ways. It is perfect for spreading on toast, scones, or muffins. It can also be used as a marinade for chicken, fish, or vegetables. It also makes a great addition to roasted potatoes or grilled corn on the cob.
