JIFFY CORN CASSEROLE (5 INGREDIENTS) EASY & DELICIOUS!

Jiffy Corn Casserole (5 Ingredients) Easy & Delicious! image

Okay, I have made this in the past for "Mexican" night & poker nights... but then we had this again a few weeks ago at a friends party and just had to post the recipe for easy access & safe keeping. There are several recipes out there for this casserole, but they are all different. This one has no eggs (which seems to be hard to find) and uses only 5 ingredients. It's so easy to make but always a crowd pleaser - try it at a BBQ, alongside chili, or as a Holiday side-dish... ** NOTE: The consistency is supposed to be like a spoonbread, it is a casserole, not like cornbread you would cut into pieces -this is like Chi Chi's corn casserole they served on the side. PS- I make a double batch & bake in a 9x13x2 casserole dish. Lastly, if you add about 3/4 cup of sugar to this, you could serve it as a dessert :-)

HOOSIER HARD-BOILED EGG CASSEROLE

Hoosier Hard-Boiled Egg Casserole image

A pretty cheap main dish to stretch your budget. Can also be a one-dish breakfast. I say below that light mayo (low-fat) is okay, but I think NON-fat tastes yucky and would not use that. I'm not that wild about cooked celery, so I substitute chopped zucchini or other vegetable for the celery, but that's just me.

Tips:

  • Use fresh, sweet corn kernels. Frozen or canned corn can be used in a pinch, but fresh corn will give your casserole the best flavor.
  • Don't overcook the corn. Corn should be tender but still have a slight crunch to it. Overcooked corn will be mushy and bland.
  • Use a combination of cheeses. A blend of cheeses, such as cheddar, mozzarella, and Parmesan, will give your casserole a rich and flavorful taste.
  • Add other mix-ins, such as bacon, jalapeños, or green chiles. These ingredients will add flavor and texture to your casserole.
  • Top the casserole with a crunchy topping, such as bread crumbs, crushed crackers, or cornflakes. This will give your casserole a golden brown crust.
  • Bake the casserole until it is golden brown and bubbly. This usually takes about 30 minutes.
  • Let the casserole cool for a few minutes before serving. This will allow the flavors to meld and the casserole to set.

Conclusion:

Hoosier corn casserole is a delicious and versatile dish that can be served as a side dish or main course. It is a classic comfort food that is perfect for any occasion. With its creamy, cheesy interior and crispy, golden brown crust, Hoosier corn casserole is sure to be a hit with everyone who tries it.
