HORCHATA - RICE DRINK

Horchata - Rice Drink image

This is how my Grandma used to make this classic agua fresca for us. It is so refreshing and delicious, bringing back fond memories of childhood. MAKES ABOUT 6 CUPS OF HORCHATA. TIme does not include overnight soaking. This can be dairy free - just don't add the milk.

Time 10m

Number Of Ingredients 6

1 c white rice, long grain
1 small cinnamon stick
5 c water, divided use
1 tsp vanilla
1/2 c milk
1/3 c sugar

Steps:

  • 1. In a saucepan or microwave, heat just TWO (2) cups of water until hot. Put the rice and cinnamon stick in a glass bowl or heat-proof pitcher. Pour the hot water over and stir for a moment. Cover with plastic wrap and soak overnight, or at least 8 hours to soften the rice.
  • 2. Pour the rice and liquid into a blender jar. Blend until very smooth. Strain the mixture into a bowl, using a spoon to help the liquid pass through the strainer.
  • 3. Add the vanilla, milk, and the remaining 3 cups of water. Add the sugar, stirring until dissolved. Taste and adjust to your taste (more sugar, more milk, more vanilla, etc.). Refrigerate and serve cold over ice. I usually dust ground cinnamon over the top. Be sure to stir before serving, as the rice settles to the bottom.

Tips:

  • Use high-quality rice: The type of rice you use will greatly affect the flavor of your horchata. Look for a short-grain or medium-grain white rice that is not too starchy. Jasmine rice or Calrose rice are good options.
  • Soak the rice overnight: Soaking the rice overnight helps to soften it and release its starch, which will make for a creamier horchata. If you're short on time, you can soak the rice for at least 3 hours.
  • Use filtered water: Filtered water will help to remove any impurities from the water and give your horchata a cleaner flavor.
  • Add cinnamon and vanilla for flavor: Cinnamon and vanilla are traditional flavors for horchata, but you can also experiment with other flavors such as nutmeg, almond, or orange zest.
  • Sweeten to taste: Horchata can be sweetened to taste with sugar, honey, or agave nectar. Start with a small amount of sweetener and add more to taste.
  • Serve chilled: Horchata is best served chilled. You can chill it in the refrigerator for at least 2 hours, or you can make it ahead of time and freeze it for up to 2 weeks.

Conclusion:

Horchata is a refreshing and delicious rice drink that is perfect for any occasion. It is easy to make and can be customized to your own taste. With a few simple ingredients, you can make a delicious horchata that will be enjoyed by everyone. So next time you're looking for a refreshing drink, give horchata a try. You won't be disappointed!
