I posted this recipe for the glaze. It will work on any size ham, but cooking times will vary depending on the size and how you like to cook your ham. It is a thick, rich glaze. I only use the water packaged with the ham when I make it.

1 (12 ounce) bottle horseradish mustard, divided
⅔ cup bourbon
⅔ cup dark brown sugar
¼ cup honey
1 tablespoon liquid hickory smoke flavoring
1 (6 pound) smoked ham, or more to taste
1 tablespoon whole cloves, or to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Combine 2/3 cup horseradish mustard, bourbon, brown sugar, honey, and liquid smoke together in a small saucepan; bring to a boil. Reduce heat to medium-low and simmer glaze, stirring frequently, until thickened, at least 30 minutes.
  • Liberally coat ham with the remaining horseradish mustard and place in a roasting pan. Spoon glaze over ham.
  • Bake in the preheated oven, basting occasionally, until until the internal temperature of the ham has reached 160 degrees F (72 degrees C), about 2 hours. (Generally bake 22 minutes per pound.)

1 (5 pound) boneless fully cooked ham
¼ cup honey, warmed
⅛ teaspoon ground cloves
1 cup packed brown sugar
½ cup prepared horseradish
¼ cup lemon juice

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Cut ham into 1/4-inch thick slices and tie slices back together in shape of original ham, using kitchen string. Place ham on a rack set in a roasting pan.
  • Stir honey and cloves together in a bowl and drizzle honey mixture over ham.
  • Bake ham in the preheated oven for 1 hour and 15 minutes, basting often with pan drippings.
  • Mix brown sugar, horseradish, and lemon juice together in a bowl. Baste ham with horseradish glaze, allowing glaze to drip between slices.

1 smoked ham (10 to 14 pounds), bone in and rind on
2/3 cup lightly packed grated fresh horseradish (from a 6-inch piece of peeled horseradish root), divided
1/2 cup honey
1/4 teaspoon ground allspice
Coarse salt and freshly ground pepper
1 cup creme fraiche
1 tablespoon chopped fresh thyme leaves
1 tablespoon finely chopped shallot

Steps:

  • Preheat oven to 350 degrees with rack in lower third. Rinse and dry ham and wrap first in parchment, then in foil, making sure thicker rind faces up. Place on a wire rack set in a rimmed baking sheet or roasting pan and bake 1 1/2 hours.
  • Meanwhile, stir together 1/3 cup horseradish, honey, allspice, 1/2 teaspoon salt, and 1/2 teaspoon pepper in a small bowl and set aside.
  • Remove ham from oven and unwrap. When cool enough to handle, peel rind from ham with a paring knife, trimming fat all over to about 1/2 inch. (It doesn't need to be perfectly even; the bottom will have less fat and more skin.) Pat dry. With the tip of the knife, score the skin with 1/4-inch-deep parallel lines, 1 to 2 inches apart. Then score skin in the opposite direction to create a diamond pattern. Return to oven and bake 30 minutes. Baste with honey-horseradish mixture and continue to bake, basting every 30 minutes, until a thermometer inserted into thickest part of flesh near (but not touching) bone registers 145 degrees, about 2 hours more. If necessary, add water to pan, about 1/4 cup at a time, to prevent pan from scorching, and tent with foil if ham begins to blacken.
  • Meanwhile, stir together creme fraiche, remaining 1/3 cup horseradish, thyme, and shallot. Season with 1 teaspoon salt and 1/2 teaspoon pepper. Transfer ham to a serving platter and let rest at least 20 minutes. Serve with horseradish cream.

1 (6 lb) fully cooked smoked ham (about 6 lb.)
1/2 cup chicken stock
1/2 cup white wine
1/2 cup honey
1 bunch fresh thyme
salt & freshly ground black pepper
3 medium beets, cooked, peeled and diced
1 tablespoon white wine or 1 tablespoon cider vinegar
3 tablespoons grated raw horseradish
1/2 teaspoon salt

Steps:

  • Preheat oven to 325°F Score surface of ham to allow for expansion, and bake for 3-4 hours, or until a meat thermometer placed in the thickest part of the ham registers 140°F.
  • After 2 hours of baking, begin glazing ham and baste frequently until it is done, Let stand for 10-15 minutes before carving to allow juices to settle.
  • GLAZE;.
  • While ham is roasting place chicken stock, wine, honey and thyme in a saucepan and simmer for 20 minutes or until mixture begins to thicken. Strain out thyme and season with salt and pepper.
  • RELISH:.
  • Using a hand blender or food processor, blend together beets, vinegar, horseradish and salt. Serve at room temperature as a relish with the ham.

1/2 cup crushed pineapple (with 1/2 amount of its juice)
1/2 cup apple jelly or 1/2 cup cranberry jelly
4 teaspoons prepared horseradish (I use hot)
3 teaspoons Dijon mustard
1/4 cup maple syrup
1 teaspoon cinnamon
1/4 teaspoon allspice
