HOT BROCCOLI DIP (CROCK POT OR MICROWAVE)

Hot Broccoli Dip (Crock Pot or Microwave) image

I love broccoli and pepper jack cheese... and this dip combines the two! This is a very quick and easy dip for parties. We like it with Frito's Scoops or tortilla chips. Leftovers are wonderful served over baked potatoes for lunch the next day. NOTE AFTER FIRST REVIEW: I have always kept this hot for serving in my mini-crockpot and haven't had trouble with it getting too thick.

Time 10m

Yield 1 small crockpot full, 8-10 serving(s)

Number Of Ingredients 3

3/4 lb monterey jack pepper cheese, cubed
1 (10 ounce) can cream of mushroom soup
1 (10 ounce) box frozen chopped broccoli, defrosted

Steps:

  • Melt the cheese in the microwave in a large bowl.
  • Add undiluted soup and mix well.
  • Cook broccoli, drain, and add to the mixture, stirring well.
  • Serve warm with Frito's Scoops, crackers, or tortilla chips.
  • Keeps well in a crock pot on low setting (stir periodically) or just pop it back in the microwave at serving time.
  • NOTE 9/11/07: I have been making this for years, but recently ran across the original recipe in an old cookbook. It turns out that the original had two cans of soup, which obviously would make a thinner dip. I'll probably still make it with one can, but if it seems thick, you might want to try two cans! :).

AMAZING BROCCOLI DIP

Amazing Broccoli Dip image

This is the dip that I grew up on. When my mother would start preparing it on Christmas Eve, the aroma would immediately activate our salivary glands and we could not wait to dig in! Serve warm with sturdy potato chips, such as Ruffles® or Lay's® Wavy.

Provided by kaletingelstad

Time 40m

Yield 12

Number Of Ingredients 10

½ cup butter
1 large onion, chopped
1 (8 ounce) package processed cheese food (such as Velveeta®), thinly sliced
1 (16 ounce) package frozen chopped broccoli, thawed
1 (23 ounce) can condensed cream of mushroom soup
1 (6 ounce) package sliced almonds
1 (4 ounce) can mushroom stems and pieces, drained
1 tablespoon Worcestershire sauce
1 teaspoon hot pepper sauce (such as Tabasco®), or more to taste
1 teaspoon garlic juice

Steps:

  • Melt butter in a medium skillet over medium heat. Add onion and saute until it just starts to turn brown, 5 to 7 minutes. Add cheese slice and cover the skillet for 2 to 3 minutes. Remove cover and continue to heat and stir until cheese is fully melted, about 3 more minutes. Remove from the heat.
  • Transfer cheese mixture to a large saucepan; add broccoli, condensed soup, almonds, mushroom stems and pieces, Worcestershire sauce, hot pepper sauce, and garlic juice. Heat over low heat, stirring frequently, for at least 15 minutes; do not allow to boil or overheat.

Tips:

  • Fresh broccoli is ideal for this dip, but frozen broccoli florets can also be used. If using frozen broccoli, thaw it completely and drain off any excess water before using.
  • Use a good quality cheddar cheese for the best flavor. A sharp cheddar will give the dip a more intense flavor, while a mild cheddar will be more mellow.
  • If you don't have any cream cheese on hand, you can substitute sour cream or Greek yogurt.
  • For a creamier dip, add an extra 1/4 cup of milk or cream.
  • Season the dip to taste with salt and pepper. You may also want to add a pinch of garlic powder or onion powder.
  • Serve the dip hot with crackers, chips, or vegetables.

Conclusion:

Hot broccoli dip is a delicious and easy appetizer that is perfect for parties or potlucks. It is made with simple ingredients that you probably already have on hand, and it can be made in the crock pot or the microwave. So next time you are looking for a quick and easy snack, give this hot broccoli dip a try.
