Onion and Tomato Relish:
8 hotdogs
Hotdog buns
8 slices of American cheese
1 tsp. butter
Fresh Avocado - sliced for garnish
1 large sweet onion - sliced
1/2 large jalapeño - chopped with seeds
1 large vine ripe tomato - quartered
2 large cloves of garlic - chopped
1 tablespoon - Worcestershire sauce
1/2 cup ketchup
1/2 tsp. salt
1/2 tsp. garlic powder
1/2 tsp. ground cumin
1/4 tsp. black pepper
1 tablespoon balsamic vinegar
2 tablespoons honey
1 tsp. brown sugar
1 tbs. olive oil

Steps:

  • Heat a large frying pan with a tsp. of butter. Add the hotdogs and cook until a beautiful golden color. Heat another large frying pan with a tablespoon of olive oil. Add the onions, garlic and jalapeño. Sauté until the onions are slightly golden. Add the tomato and continue to sauté until the tomato is soft. In a small bowl combine the Worcestershire sauce, ketchup, vinegar, honey, salt, black pepper, garlic powder, ground cumin and brown sugar. Stir together and add to the pan. Simmer on low while the hot dogs finish cooking. Heat the hotdog buns and place the sliced American cheese on the bun; top with the hotdog and the onion/tomato relish.

3 cups grape tomatoes or 3 cups cherry tomatoes, halved
1 cup finely chopped red onion
6 garlic cloves, minced (or 1/2 teaspoon garlic powder)
2 tablespoons snipped fresh oregano or 2 tablespoons parsley
2 tablespoons honey mustard
1 tablespoon water
1/2 teaspoon salt
1/2 teaspoon packed brown sugar
1/4 teaspoon ground black pepper
8 hot dogs (smoked) or 8 cooked bratwursts (smoked)
1 cup red seedless grapes, halved or quartered
8 hot dog buns, split and toasted

Steps:

  • For the tomato relish, fold a 36x18-inch piece of heavy foil in half to make an 18x18-inch square. In a medium bowl combine 2 cups of the tomatoes, the onion, garlic, oregano, mustard, water, salt, brown sugar and pepper. Place mixture in center of the foil. Bring up two opposite edges of the foil; seal with a double fold. Fold the remaining edges to enclose the mixture, leaving space for steam to build.
  • For a charcoal grill, place the foil packet on a grill rack directly over medium coals. Grill for 10 minutes; turn packet. Grill about 10 minutes more or until onion is tender. (For a gas grill, preheat grill. Reduce heat to medium. Place foil packet on grill rack directly over heat. Cover and grill as above.).

1 tablespoon dark brown sugar
2 teaspoons mustard seeds
1 teaspoon coriander seeds
1 tablespoon extra-virgin olive oil
2 small red onions, 1 finely sliced and 1 finely diced
1 small red pepper, seeded and finely diced
Kosher salt
1 to 2 teaspoons hot sauce
6 large dill pickles, finely diced
2 cups canola oil
1/2 cup all-purpose flour
1/2 teaspoon hot paprika
2 small red onions, sliced into thin rounds
Kosher salt
8 all-beef hot dogs
1 tablespoon canola oil, if pan-frying
8 classic potato hot dog buns
Dijon mustard, for serving

Steps:

  • For the relish: Bring the red wine vinegar plus 1/4 cup water to a gentle simmer in a medium saute pan over medium heat. Add the sugar, mustard seeds and coriander seeds. Simmer until the liquid reduces to a syrup consistency and the seeds become tender, 10 to 12 minutes. Transfer to a medium bowl.
  • Heat the oil in the same pan over medium heat until it smokes lightly. Add the onions and red pepper and cook over high heat until slightly tender, 2 to 3 minutes. Season with salt. If you want to boil the dogs, place the dogs in a pan with enough simmering water to cover them and gently cook over medium-low heat until fully hot, 8 to 10 minutes. To pan-fry, add them to a little hot oil in a medium saute pan over medium heat until they are golden brown on all sides, 8 to 10 minutes.
  • Toast the buns in the toaster or a hot (350 degree F) oven until golden brown, 3 to 5 minutes. Spread a layer of mustard down the length of the dogs and place them in the buns. Top with hearty helpings of the relish and even layers of the onions all the way down the bun.

12 chopped green bell peppers
10 green tomatoes, chopped
