CORNBREAD WITH JALAPENO PEPPERS

Cornbread With Jalapeno Peppers image

An absolutely incredible cornbread recipe! I don't remember where I found this one but it was while I was in grad school. I invited the crew over and made this recipe to accompany a pot of chili. All I can say is that it was excellent and much enjoyed! If there are leftovers, excellent reheated or toasted. A lot of ingredients but.... yummmmmm!

Tips:

  • Use fresh, ripe peppers for the best flavor - red and orange bell peppers will give a milder flavor, while yellow and green bell peppers will add more heat.
  • Wear gloves when handling the peppers, as the capsaicin oils can irritate your skin. Also avoid touching your eyes, nose, or mouth until after you have thoroughly washed your hands.
  • Pickle the peppers in a glass jar for at least 2 weeks before using them. This will allow the flavors to develop and mellow.
  • When making the cornbread, be sure to use self-rising cornmeal. This will help the bread to rise properly.
  • Add the pickled peppers to the cornbread batter just before baking. This will prevent them from sinking to the bottom of the pan.
  • Bake the cornbread in a hot oven for 20-25 minutes, or until a toothpick inserted into the center comes out clean.

Conclusion:

Hot pickled pepper cornbread is a delicious and easy-to-make dish that is perfect for any occasion. The combination of sweet cornbread and spicy peppers is sure to please everyone at your table.
