6 boneless skinless chicken breast halves (8 ounces each)
6 slices fully cooked ham
6 slices Swiss cheese
1/4 cup all-purpose flour
1/4 cup grated Parmesan cheese
1/2 teaspoon rubbed sage
1/4 teaspoon paprika
1/4 teaspoon pepper
1/4 cup canola oil
1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted
1/2 cup chicken broth
Chopped fresh parsley, optional

Steps:

  • Flatten each chicken breast half to 1/4-in. thickness; top with ham and cheese. Roll up and tuck in ends; secure with toothpicks. , In a shallow bowl, combine the flour, cheese, sage, paprika and pepper; coat chicken on all sides. 4 boneless skinless chicken breast halves
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon paprika
1 cup shredded gruyere cheese
1 (3 ounce) package cream cheese, softened
1/3 cup grated parmesan cheese
1/4 cup sour cream
4 green onions, minced
2 cloves garlic, minced
2 shallots, minced
1/2 cup butter, melted...divided
1/2 lb fresh mushrooms, sliced
4 slices prosciutto
3 tablespoons flour
3/4 cup dry sherry

Steps:

  • Pound chicken breasts to flatten.
  • Mix salt, pepper and paprika; sprinkle on chicken.
  • Mix Gruyere cheese with the next 5 ingredients.
  • Saute shallots in 2 TBS butter 1 minute; add mushrooms, saute for 3 minutes.
  • Using a slotted spoon, remove mushroom mixture from pan.
  • Place 1 slice prosciutto on each chicken breast half.
  • Spread Gruyere cheese mixture over the prosciutto.
  • Fold the sides in and roll up; secure with toothpicks.
  • Brown chicken in 3 TBS butter; place chicken in greased 8 inch square baking dish.
  • Bake at 350° for 15 minutes; remove and keep warm.
  • Add remaining 3 TBS butter to skillet; stir in flour until smooth.
  • Cook and stir for 1 minute; slowly add sherry.
  • Cook and stir until thickened.
  • Add mushroom mixture; stir well.
  • Pour over chicken, return to oven; bake another 10 minutes.

Three recipes were combined to make these chicken roll-ups. I've made this twice for the Bunco ladies and they always rave about how wonderful it is. I'm not 100% sure about the quantities and cooking time since I'm usually making a much larger batch. I used the flat side of a metal meat pounder and was able to flatten out a piece of chicken in less than 10 whacks. If needed, I trim some of the edges to make it look a little neater.

4 boneless chicken breasts, skin removed
4 slices muenster cheese
4 slices cooked bacon
2 cups French-fried onions
1 egg, beaten
meat seasoning (preferably Gordon's Grub Rub)

Steps:

  • Preheat oven to 350.
  • Lightly grease a baking sheet.
  • Place French Fried Onions in a plastic bag and crush into small pieces.
  • Place chicken breasts between sheets of waxed paper and pound to ¼ inch thickness.

8 skinless, boneless chicken breasts
8 slices cooked ham
4 slices Swiss cheese, cut into 1 inch pieces
salt and pepper to taste
1 teaspoon dried thyme
¼ cup melted butter
½ cup cornflakes cereal crumbs
1 (10.75 ounce) can condensed cream of chicken soup
½ cup sour cream
1 teaspoon lemon juice

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Place each chicken breast half between sheets of plastic wrap and pound with a meat mallet to about 1/8 inch thickness. Place a finger of cheese on each ham slice and sprinkle lightly with thyme and salt and pepper to taste. Roll up seasoned ham and cheese 'jellyroll-style', then roll each chicken breast with ham and cheese inside. Tuck in ends and fasten with toothpicks.
