HUNGRY GIRL PEPPERONI PIZZA SCRAMBLE
From the HG Cookbook 200 under 200. This cookbook has an amazing collection of recipes that are all under 200 calories. This is one that immediately caught my eye! Hope you enjoy it! From HG - entire scramble has 173 calories, 2.5g fat, 7.5g carbs & 3g sugars (this is if you choose to use the turkey pepperoni)

Steps:
- Bring a pan sprayed with nonstick spray to a medium heat. Add egg substitute and turkey pepperoni and scramble as you would ordinary eggs.
- Add salt, oregano, garlic powder and black pepper. Once scramble begins to look solid after about 1 minute, add drained tomatoes.
- Scramble for another 30 seconds or so and then add mozzarella cheese and reduce heat to low and cover pan.
- Let cook for another 30 seconds or until cheese melts.

PEPPERONI PIZZA WRAP

- Set toaster oven to highest setting.
- Break string cheese into thirds and put in a blender or food processor-blend at high speed until cheese takes on a shredded or grated consistency. (Or just tear string cheese into pieces and roughly chop.) Set aside.
- Place tortilla on a microwave-safe plate and microwave for 10 seconds, or until just warm. Evenly spread sauce onto the center of the tortilla, and sprinkle with a dash of each of the spices. Top with spinach, stewed tomatoes, Parm-style topping, chopped turkey pepperoni, and shredded/grated string cheese.
- Wrap tortilla up like a burrito, folding the sides in first, and then rolling it up from the bottom. Place wrap on a microwave-safe plate, seam side down, and warm in the microwave for 30 seconds.
- Transfer wrap to the toaster oven and cook until hot on the inside and slightly crisp on the outside, about 3 minutes. Dig in!

- Preheat oven to 400 degrees. Place Fiber One and oats in a blender, and grind until a breadcrumb-like consistency is reached. In a small bowl, combine the "breadcrumb'" mixture, egg substitute and garlic powder. Mix well. Bring a pan sprayed with nonstick spray to medium heat. Spoon mixture into the pan and smooth into a circular shape (larger for a thin crust, smaller for a thick crust). Raise heat to medium-high. Spray a spatula on both sides with nonstick spray. Allow crust to cook until the bottom is slightly browned (about 2 minutes), and then gently flip with the spatula. Once both sides are slightly browned, remove crust from the pan, and place it on a plate to cool. Pour sauce evenly onto the oat/cereal crust, leaving a border of about half an inch. Next, evenly top sauce with the cheese, followed by the pepperoni. Place pizza directly on the oven rack, and cook for 10 minutes. If you like, season your pizza with the optional ingredients. Cut into quarters for 4 times the fun!
