INDIVIDUAL MEAT LOAVES
Steps:
- Preheat the oven to 350 degrees F. Heat the olive oil in a medium saute pan. Add the onions, thyme, salt, and pepper and cook over medium-low heat, stirring occasionally, for 8 to 10 minutes, until the onions are translucent but not brown. Off the heat, add the Worcestershire sauce, chicken stock, and tomato paste. Allow to cool slightly.
- In a large bowl, combine the ground chuck, onion mixture, bread crumbs, and eggs, and mix lightly with a fork. Don't mash or the meatloaf will be dense.
- Divide the mixture into 6 (10 to 11-ounce) portions and shape each portion into a small loaf on a sheet pan. Spread about a tablespoon of ketchup on the top of each portion. Bake for 40 to 45 minutes, until the internal temperature is 155 to 160 degrees F and the meat loaves are cooked through. Serve hot.

SAVORY SCOTCH MEAT LOAVES
I love these scotch meat loaves with the ketchup glaze on top. You can make these meat loaves with either ground beef or with ground pork sausage. I especially enjoy them made with "seasoned" ground pork sausage, which already has salt, ground black pepper, minced garlic, and ground sage added to it.

Steps:
- In a mixing bowl, combine the beaten egg, bread crumbs, diced onion, diced green pepper, plus the salt and pepper.
- Add the ground beef or ground pork; mix well.
- Shape equal portions of the meat mixture around each hard boiled egg; completely enclosing the egg.
- Arrange the meat loaves in a 13x9x2-inch baking dish. (If I'm using 90% lean ground beef, I'll lightly grease the baking dish before adding the meat loaves.).
- Bake in a 350º oven for 30 minutes.
- While the meat loaves are baking in the oven, prepare the sauce.
- In a bowl, combine all of the sauce ingredients.
- Once the meat loaves have baked for 30 minutes, remove the baking dish from the oven, and discard any excess fat.
- Pour the sauce over the meat loaves, and return the baking dish to the oven.
- Continue baking the meat loaves in the oven for 15 minutes.
- Once the meat loaves are done baking, remove from baking dish and serve immediately.
- *Note: Sometimes when I'm mixing up the meat loaves, I'll substitute 1/4 cup to 1/3 cup of plain dried bread crumbs for the soft bread crumbs. I have also made the meat loaves using either 85% or 87% ground beef. Also, if desired, you can opt to make 4 meat loaves, by just using 4 large size hard boiled eggs, and shaping a 1/4 of the meat mixture around each hard boiled egg. Arrange the meat loaves in an 8 or 9-inch baking pan, and bake as stated in cooking instructions.
- *Additional Note: Also, I did want to mention, when it comes to preparing the medium hard boiled eggs, I let the eggs come to a boil in a saucepan of water, I then remove the pan from the heat, cover the pan, and let the eggs sit for 9 minutes. Afterwards, I place the eggs in cold water (which I also added ice cubes to it), and let the eggs sit for 15 minutes. I then remove the eggs, peel them, rinse them under cold water, and pat them dry with paper toweling before I proceed to make the meatloaves.

Steps:
- Preheat oven to 350.
- Mix together the ground beef, oatmeal, salt, egg, milk, and onion powder.
- Form into 4 small loaves.
- Place in shallow baking pan.
- Mix the catsup, mustard, and brown sugar together.
- Spread topping evenly on top of the loaves.
- Put a little water in the bottom of the baking pan.
- Bake at 350 for 35-40 minutes.
Tips:
- Choose the right ground meat: A combination of ground beef and ground pork is a classic choice for meatloaf, but you can also use all beef, all pork, or a mixture of different meats. If you're using lean ground meat, add some fat, such as butter or olive oil, to help keep the meatloaf moist.
- Season the meatloaf well: Don't be afraid to use a variety of spices and herbs to flavor your meatloaf. Some popular choices include garlic, onion, salt, pepper, thyme, rosemary, and sage. You can also add some grated cheese or crumbled bacon to the meatloaf for extra flavor.
- Don't overmix the meatloaf: Overmixing the meatloaf will make it tough. Simply mix the ingredients until they are just combined.
- Form the meatloaf into a loaf shape: Place the meatloaf mixture into a loaf pan and shape it into a loaf. You can also shape the meatloaf into individual meatballs if you prefer.
- Bake the meatloaf at a high temperature: Preheat your oven to a high temperature, such as 375 degrees Fahrenheit, and bake the meatloaf for about 1 hour, or until it is cooked through. Baste the meatloaf with pan juices every 15 minutes or so to help keep it moist.
- Let the meatloaf rest before slicing: Once the meatloaf is cooked through, let it rest for about 10 minutes before slicing. This will help the meatloaf hold its shape and make it easier to slice.
Conclusion:
Meatloaf is a classic comfort food that is easy to make and can be tailored to your own taste. With a few simple tips, you can make a delicious and juicy meatloaf that your family and friends will love. So next time you're looking for a quick and easy dinner idea, give one of these meatloaf recipes a try.
