Time 1h5m

Yield 8 cups tea

Number Of Ingredients 4

8 stalks rhubarb, cut into 3 inch lengths
8 cups water
1/3 cup sugar, to taste
1 sprig mint, as garnish

Steps:

  • Add rhubarb to water and bring to a boil; reduce heat and simmer for 1 hour.
  • Strain and add sugar to taste; serve iced with mint garnish.

Tips:

  • Choose the right rhubarb: Look for firm, bright red stalks with minimal blemishes. Avoid stalks that are wilted or have brown spots.
  • Wash the rhubarb thoroughly: Rinse the rhubarb stalks under cold water to remove any dirt or debris.
  • Cut the rhubarb into small pieces: This will help the rhubarb release its flavor more easily.
  • Use a variety of sweeteners: You can use sugar, honey, or maple syrup to sweeten your iced rhubarb tea. The amount of sweetener you use will depend on your personal preference.
  • Let the tea steep: The longer you steep the tea, the more flavorful it will be. However, be careful not to over-steep the tea, as this can make it bitter.
  • Serve the tea chilled: Iced rhubarb tea is best served chilled. You can either refrigerate it for a few hours or overnight, or you can serve it over ice.
