1/2 cup whole wheat flour
1 teaspoon salt
1/4 teaspoon garlic powder, optional
3/4 cup hot water (140°)

  • In a large bowl, combine the flours, salt and, if desired, garlic powder. Stir in water and oil. Turn onto a floured surface; knead until smooth and elastic, 8-10 minutes. Cover and let rest for 30 minutes. Divide dough into 10 portions. On a lightly floured surface, roll each portion into a 6-in. circle. 1 cup all-purpose flour, plus more for dusting
1/4 cup plain yogurt
1 tablespoon salt

Steps:

  • Whisk whole wheat flour and 1 cup all-purpose flour in a medium bowl. Make a well in the center and add yogurt, salt, and 3/4 cup water. Mix with a wooden spoon until a shaggy dough forms.

2 tablespoons olive oil
¾ cup hot water or as needed

According to one source, it is impossible to make a good chapati with whole wheat flour; however other authentic Indian and Southeast Asian cooks acknowledge the use of it. If you press lightly around the edges of the chapati as it cooks you will encourage bubbles to form and make the chapati light. As they cook, wrap them in a clean tea towel until all are ready.
