Instant Pot Bacon Lemon Brussels Sprouts image

These brussels sprouts are a cinch to make, thanks to the Instant Pot. They're packed with so much flavor because of the bacon and fresh lemon juice!

Provided by Jonathan Melendez

Categories     Vegetable

Time 15m

Yield 6 serving(s)

Number Of Ingredients 9

2 lbs Brussels sprouts, cut in half
1 1/2 cups water
6 slices bacon, diced
2 medium shallots, thinly sliced
4 tablespoons unsalted butter
2 garlic cloves, minced
1 tablespoon fresh lemon juice
1/2 teaspoon salt
1/4 teaspoon black pepper

Steps:

  • Place a steamer basket inside of a 6-quart or larger Instant Pot. Pour in the water and then add the Brussels sprouts. Lock the lid and make sure the vent is set to seal. Cook on high pressure for 2 minutes. Once done, manually release the pressure until all the steam has been released and the lid has unlocked. If you allow the pressure to release naturally, the sprouts will become mushy.
  • Carefully open the lid, remove the steamer basket with the sprouts and set aside. Drain the liquid from the inner bowl and return to the pressure cooker. Press the sauté function and add the bacon. Cook, stirring often, until the bacon has browned. Stir in the shallots and garlic and cook for 1 to 2 minutes, or until softened. Add the Brussels sprouts and sauté for a minute longer. Season the sprouts with lemon juice, salt and black pepper. Turn off the machine and serve immediately.

Tips:

  • Select Fresh Brussels Sprouts: Choose firm and brightly colored Brussels sprouts for the best flavor and texture. Remove any yellow or wilted leaves.
  • Trim and Halve Brussels Sprouts: Trim the stem end of each Brussels sprout and halve them lengthwise. This helps them cook evenly and absorb the bacon fat and seasonings.
  • Use High-Quality Bacon: Choose thick-cut bacon for a more substantial and flavorful dish. Turkey bacon can be substituted for a healthier alternative.
  • Cook Bacon Until Crispy: Cook the bacon in the Instant Pot until it's crispy. This adds a smoky and savory flavor to the dish.
  • Add Vegetables and Seasonings: Once the bacon is cooked, add the Brussels sprouts, shallots, garlic, and seasonings to the pot. Stir to combine.
  • Deglaze the Pot: Before cooking, deglaze the pot with white wine or chicken broth to dissolve any browned bits and add extra flavor to the dish.
  • Cook on High Pressure: Cook the Brussels sprouts on high pressure for the recommended time. This ensures that they are cooked through but still retain their vibrant color and texture.
  • Natural Pressure Release: Allow the pressure to release naturally for 5-10 minutes before quick-releasing the remaining pressure. This helps prevent the Brussels sprouts from overcooking.
  • Garnish and Serve: Garnish the cooked Brussels sprouts with fresh herbs, such as parsley or chives, before serving. Serve immediately as a side dish or main course.

Conclusion:

This Instant Pot bacon Brussels sprouts recipe is a quick, easy, and delicious way to prepare this classic side dish. The pressure cooker cooks the Brussels sprouts in a fraction of the time it takes to boil or roast them, and the bacon adds a smoky and savory flavor that complements the slightly bitter taste of the Brussels sprouts. With its crispy texture and flavorful sauce, this dish is sure to be a hit at your next gathering. So, gather your ingredients, fire up your Instant Pot, and enjoy this simple yet satisfying dish!
