Time 25m

Yield 1 quart

Number Of Ingredients 6

2 cups heavy cream
2 cups whole milk
3/4 cup granulated sugar
2 tablespoons instant coffee granules
6 egg yolks
Chocolate curls, for garnish

Steps:

  • Combine the cream, milk, sugar, and coffee in a medium, heavy saucepan. Bring to a gentle boil over medium heat. Remove from the heat.
  • Beat the egg yolks in a medium bowl. Whisk 1 cup of the hot cream into the egg yolks. Gradually add the egg mixture in a slow, steady stream, to the hot cream. Cook over medium-low heat, stirring occasionally, until the mixture thickens enough to coat the back of a spoon and reaches 170 degrees F. on an instant-read thermometer, about 5 minutes. Remove from the heat and strain through a fine mesh strainer into a clean container. Cover with plastic wrap, pressing down against the surface to keep a skin from forming. Chill in the refrigerator for 2 hours.
  • Remove from the refrigerator and pour into the bowl of an ice cream machine. Freeze according to the manufacturer's instructions. After the ice cream is made, transfer to an airtight container. Cover tightly and freeze until ready to serve. Garnish with chocolate curls.

Tips:

  • Use high-quality coffee: The flavor of your coffee ice cream will be greatly impacted by the coffee you use. Choose a coffee that you enjoy drinking, and make sure it is fresh.
  • Brew your coffee strong: You want the coffee flavor to come through in the ice cream, so brew your coffee strong. You can do this by using more coffee grounds or by brewing the coffee for a longer period of time.
  • Let the coffee cool completely: Before you add the coffee to the ice cream base, make sure it has cooled completely. This will prevent the ice cream from melting.
  • Use heavy cream: Heavy cream will give your ice cream a rich and creamy texture. If you don't have heavy cream, you can use milk instead, but the ice cream will not be as creamy.
  • Don't overchurn the ice cream: Overchurning the ice cream will make it tough and grainy. Churn the ice cream until it is thick and creamy, but not solid.
  • Add mix-ins after churning: If you want to add mix-ins to your coffee ice cream, such as chocolate chips or nuts, do so after the ice cream has been churned. This will prevent the mix-ins from getting frozen and hard.

Conclusion:

Coffee ice cream is a delicious and refreshing treat that is perfect for any occasion. With a few simple ingredients and a little bit of time, you can make your own coffee ice cream at home. So next time you're craving something sweet, give this coffee ice cream recipe a try. You won't be disappointed!
