Steps:
- Place the water into a large 6 to 8 quart stockpot along with salt, sugar, saltpeter, cinnamon stick, mustard seeds, peppercorns, cloves, allspice, juniper berries, bay leaves and ginger. Cook over high heat until the salt and sugar have dissolved. Remove from the heat and add the ice. Stir until the ice has melted. If necessary, place the brine into the refrigerator until it reaches a temperature of 45 degrees F. Once it has cooled, place the brisket in a 2-gallon zip top bag and add the brine. Seal and lay flat inside a container, cover and place in the refrigerator for 10 days. Check daily to make sure the beef is completely submerged and stir the brine.
- After 10 days, remove from the brine and rinse well under cool water. Place the brisket into a pot just large enough to hold the meat, add the onion, carrot and celery and cover with water by 1-inch. Set over high heat and bring to a boil. Reduce the heat to low, cover and gently simmer for 2 1/2 to 3 hours or until the meat is fork tender. Remove from the pot and thinly slice across the grain.
IPA CORNED BEEF
This by far has been my most successful corned beef recipe that I've done. Instead of using Guinness® or an American lager like most recipes call for, I used a hoppy Lagunitas Wilco Tango Foxtrot IPA which cooked some amazing flavors into the corned beef.

Tips:
- Use a good quality corned beef brisket: Look for a brisket that is well-marbled and has a deep red color.
- Rinse the corned beef brisket thoroughly before cooking: This will help to remove any excess salt.
- Add aromatics to the cooking liquid: Aromatics such as onions, garlic, carrots, and celery will help to flavor the corned beef.
- Cook the corned beef brisket slowly: The best way to cook corned beef is to cook it slowly over low heat. This will help to tenderize the meat and develop the flavor.
- Baste the corned beef brisket occasionally: Basting the corned beef brisket with the cooking liquid will help to keep it moist and flavorful.
- Let the corned beef brisket rest before carving: Letting the corned beef brisket rest for a few minutes before carving will help to distribute the juices throughout the meat.
Conclusion:
Cooking corned beef brisket with IPA is a great way to add a unique flavor to this classic dish. The IPA adds a hoppy bitterness that complements the salty flavor of the corned beef.
