- Place potatoes in cold water in a medium saucepan. Bring to a boil and turn down the heat to medium, letting them cook until fork tender, about 15 minutes. In a skillet, saute bacon on low heat until crispy. Place bacon on a paper towel and discard the grease. Drain the potatoes, but DO NOT rinse them under cold water. Rather let them cool for about 6 to 8 minutes on a sheet pan. In a small bowl combine vinegar, mayonnaise, mustard, scallions, onion, sugar, and salt and pepper. Transfer potatoes to a mixing bowl and sprinkle bacon and hard boiled eggs over them. Then fold mayonnaise mixture into the potatoes and serve at room temperature.

THE ORIGINAL POTATO SALAD
This recipe is right off the Hellman's mayonnaise jar. To me, it's so good it rivals my mother in law's potato salad, which I think is the best there is. It's a plain and simple potato salad, but it's delicious! Add pimentos, olives, or green peppers depending on what you like in your potato salad.

IRISH POTATO SALAD
A potato salad about potatoes - that tastes like potatoes! The magic is to use baking potatoes, fresh cooked, skin on, peeled, and diced while still warm and sprinkled with just enough red wine vinegar to enhance the potato taste. Chopped celery, sweet onion and hard boiled eggs add texture and flavor. The mayonnaise, mixed with the crumbled potato and egg yolk resuts in a creamy, dreamy salad. For the really - really best potato salad, make this an hour or two before serving, cover, let stand at room temp. - then add the mayonnaise and mix.

Tips:
- Use a variety of potatoes. For the best flavor and texture, use a combination of waxy and starchy potatoes, such as Yukon Gold, Red Bliss, and Russet potatoes.
- Boil the potatoes until they are just tender. Overcooked potatoes will be mushy and bland. To test for doneness, insert a fork into a potato; it should easily pierce the potato, but there should still be a slight resistance.
- Cool the potatoes completely before dressing them. This will help the potatoes to absorb the dressing better and prevent them from becoming soggy.
- Use a light hand when dressing the potatoes. You don't want to overdress the potatoes, as this will make them heavy and greasy. Start with a small amount of dressing and add more to taste.
- Add your favorite mix-ins. Diced celery, onion, hard-boiled eggs, and pickles are all classic potato salad mix-ins. Feel free to get creative and add your own favorites, such as bacon, cheese, or chopped nuts.
Conclusion:
Potato salad is a versatile dish that can be enjoyed in many different ways. Whether you like it classic or with a twist, there's a potato salad recipe out there for everyone. So next time you're looking for a side dish that's both delicious and easy to make, give potato salad a try.
