Provided by KelBel

Categories     Chowders

Time 40m

Yield 4 serving(s)

Number Of Ingredients 8

8 ounces kielbasa, halved lengthwise and thinly sliced
2 onions, finely chopped
1 tablespoon butter
14 1/2 ounces chicken broth
12 ounces baking potatoes, peeled and cut into 1/2-inch cubes
1 cup half-and-half
16 ounces frozen corn, thawed
salt and pepper

Steps:

  • Heat a deep skillet or a wide 4- to 6-quart pot over medium-high heat. Add the kielbasa and cook, stirring, until lightly browned, about 6 minutes. Transfer to a plate.
  • Add the onions and butter to the pan and cook over medium heat, stirring occasionally, until golden, about 6 minutes.
  • Add the broth and potato and bring to a boil. Reduce the heat, cover with a lid and simmer until the potato is tender, about 10 minutes.
  • Add the half-and-half and corn and cook, stirring, until heated through.
  • Using a blender or food processor, puree 1 cup chowder until smooth. Stir the puree back into the chowder along with the browned kielbasa and season to taste with salt and pepper.

Tips:

  • Choose the right type of kielbasa. Smoked kielbasa adds a delicious smoky flavor to the chowder, but you can also use fresh kielbasa if you prefer.
  • Don't overcrowd the pot. When cooking the kielbasa and vegetables, make sure to give them enough room to brown. If the pot is too crowded, the vegetables will steam instead of brown.
  • Use a good quality chicken broth. The chicken broth is the base of the chowder, so it's important to use a good quality broth. You can use homemade chicken broth or a store-bought broth.
  • Don't boil the chowder. Bring the chowder to a simmer and then reduce the heat to low. Simmer the chowder for at least 30 minutes, or until the vegetables are tender.
  • Serve the chowder with your favorite toppings. Some popular toppings for Irish kielbasa chowder include sour cream, shredded cheese, and chopped green onions.

Conclusion:

Irish kielbasa chowder is a hearty and flavorful soup that is perfect for a cold winter day. It's easy to make and can be tailored to your own taste preferences. So next time you're looking for a delicious and satisfying soup, give Irish kielbasa chowder a try.
