Time 20m

Yield 4 burgers

Number Of Ingredients 14

1 1/2 pounds ground beef (equal mix of ground brisket, chuck and rib-eye)
Kosher salt and freshly ground black pepper
1 small sweet onion, sliced into thin rings
8 slices Cheddar
4 tablespoons butter, at room temperature
4 English muffins, split
2 tablespoons Dijon mustard
2 tablespoons mayonnaise
2 tablespoons ketchup
2 tablespoons prepared horseradish
2 tablespoons finely diced gherkins
1 tablespoon sliced chives
12 dill pickle slices, if desired
8 Gem lettuce leaves, cut to the size of the English muffins

Steps:

  • Prepare a gas grill with a grill pan for medium heat.
  • Gently form the ground beef into 4 loosely packed patties, making sure not to over work the meat. Season the burgers with salt and pepper.
  • Place 4 onion rings on the grill and press a burger patty onto each one. Let this cook together until the burgers caramelize on that side, 3 to 4 minutes. Flip the burgers and top with 2 slices cheese (on top of the onions), then continue to cook to your desired temperature.
  • Spread 1 tablespoon butter onto each English muffin. Season with salt and pepper, then toast on the grill.
  • In a mixing bowl, combine the Dijon, mayonnaise, ketchup, horseradish, gherkins and chives. Fold together until evenly incorporated.
  • To assemble, spread the special sauce on both slices of each English muffin. Stack the burgers on the bottom slices, then the pickles (if using), lettuce and top slices of English muffin.

Time 30m

Yield 4 serving(s)

Number Of Ingredients 7

2 -3 boneless chicken thighs
8 fresh shiitake mushrooms
8 shishito green peppers or 3 small bell peppers
2 -3 tablespoons mirin (or 2-3 tbsp. sake + 2 tsp. sugar)
2 -3 tablespoons soy sauce
japanese sansho pepper (optional)
shichimi togarashi pepper or red chili pepper flakes (optional)

Steps:

  • Remove excess fat from chicken.
  • Remove hard end tips of mushrooms, and cut into halves or fourths depending on size.
  • Destem and remove seeds from peppers; cut into 4-6 pieces if bell peppers are used.
  • Heat a non-stick fry pan over medium-high heat until hot; add chicken skin side down, and cook until skin crisps and turns golden.
  • Turn chicken and cook other side until brown.
  • Add mushrooms and peppers to pan.
  • When meat is cooked done, add the mirin and the soy sauce; turn chicken and vegetables frequently.
  • Remove chicken when sauce thickens; cut into bite-size pieces.
  • Arrange all on a platter.
  • Serve sansho pepper and shichimi togarashi as table condiments.

Tips:

  • Choose the right ground beef. A blend of chuck and sirloin is a good option, as it will give you a juicy and flavorful burger.
  • Don't overwork the meat. Mix the ingredients together gently, just until they are combined. Overworking the meat will make it tough.
  • Season the meat liberally. Use a variety of spices, such as salt, pepper, garlic powder, and onion powder. You can also add some grated cheese or chopped herbs.
  • Form the burgers into patties. Make sure the patties are uniform in size and shape, so that they cook evenly.
  • Cook the burgers over medium heat. This will help to prevent them from drying out.
  • Flip the burgers only once. Flipping them too often will make them tough.
  • Cook the burgers to your desired doneness. The USDA recommends cooking ground beef to an internal temperature of 160 degrees Fahrenheit.
  • Let the burgers rest for a few minutes before serving. This will help them to retain their juices.

Conclusion:

Japanese-style hamburgers are a delicious and unique way to enjoy this classic dish. With their tender, juicy patties and flavorful toppings, they are sure to be a hit with your family and friends. So next time you're looking for a new burger recipe, give these Japanese-style hamburgers a try!
