Italian Inspired Bison Meatloaf Recipe - (3.6/5) image

Provided by AllysKitchen

Number Of Ingredients 17

1 pound ground bison
1 pound ground pork
2 eggs, beaten
1 tablespoon garlic, minced
2 teaspoons sea salt
2 teaspoons dried basil
2 teaspoons dried oregano
1/3 cup fresh parsley and cilantro, chopped
1 tablespoon stone ground mustard
1/2 teaspoon red chili flakes
1/2 cup ketchup + more for drizzle when baking
2 tablespoons Worcestershire
1/2 teaspoon sea salt
1 teaspoon hot sauce (your choice)
1 1/2 cups Italian bread crumbs
1 teaspoon ground cumin
4 tablespoon extra virgin olive oil (divided)

Steps:

  • Preheat oven to 375 degrees fahrenheit. Crumble the ground meat together in a large mixing bowl. Set aside. In another small bowl, combine the beaten eggs, garlic, salt, basil, oregano, parsley/cilantro, mustard and chili flakes and blend. Blend this mixture into the meat then add the bread crumbs and blend well. Form into a meatloaf. Drizzle half of the olive oil in a skillet or baking dish and place the meatloaf in the pan. I created an oval shape about 3-4" deep in the center-most part. Combine the ketchup, Worcestershire, salt, hot sauce, cumin and remaining olive oil in a small bowl and blend. Pour this on top of the meatloaf and spread to cover the top. Drizzle (zigzag) with some more ketchup. Bake in a preheated 375 oven for about 60-65 minutes. Remove and let it rest about 15 minutes before cutting and serving.

Top tips:

  • For a crispy top: Cook the meatloaf in a toaster or convection setting for the first 15 minutes of cooking to help brown the top. Alternatively, broil the meatloaf for 5-10 minutes at the end of cooking time.
  • For a moist meatloaf: Add 1/2 cup of bread crumbs to the meat mixture. This will help absorb any juices that come out of the meat as it cooks, keeping it moist and juicy.
  • For a flavorful meatloaf: Use a variety of herbs and spices in the meat mixture. Some popular options include basil, oregano, thyme, rosemary, paprika, and chili powder.
  • For a cheesy meatloaf: Add 1/2 cup of shredded cheese to the meat mixture. This will give the meatloaf a cheesy, gooey texture.
  • For a healthier meatloaf: Use ground turkey or chicken instead of ground becf. You can also use a combination of ground meat and ground turkey or chicken.

Conclusion:

Italian Bison Meatloaf is a delicious and versatile dish that can be served with a variety of sides. It's perfect for a weeknight dinner or a special occasion meal. With its juicy, flavorful interior and crispy, browned top, this meatloaf is sure to be a hit with everyone who takes a bit.
