Time 40m

Yield 4

Number Of Ingredients 8

1 tablespoon olive oil
4 skinless, boneless chicken breast halves, cubed
2 cloves garlic, chopped, or to taste
½ cup red cooking wine
1 (28 ounce) can Italian-style diced tomatoes
8 ounces small seashell pasta
5 ounces fresh spinach, chopped
1 cup shredded mozzarella cheese

Steps:

  • Heat the olive oil in a large skillet with a lid over medium heat, and cook and stir the chicken and garlic until the chicken is no longer pink in the center, 5 to 8 minutes. Pour the wine and diced tomatoes with their juice into the skillet, and bring to a boil over high heat while scraping any browned bits of food off of the bottom of the pan with a wooden spoon.
  • Stir in the shell pasta, and return to a boil. Cook uncovered, stirring occasionally, until the shells have cooked through, but are still firm to the bite, about 10 minutes. Spread the spinach over the top of the pasta, cover, and simmer until the spinach leaves are cooked, about 5 minutes. Sprinkle the mozzarella cheese evenly over the skillet, and simmer until the cheese has melted and the pasta is bubbling, about 5 minutes.

1/2 teaspoon freshly cracked black pepper
5 cloves garlic, minced
1 cup plus 3 tablespoons olive oil
8 bone-in, skin-on chicken thighs

2 cups mixed cherry tomatoes
1 loaf crusty ciabatta bread
2 tablespoons minced fresh parsley

Tips:

  • Prep Ahead: You can marinate the chicken and vegetables the day before for extra flavor. It allows the flavors to meld together and results in a more flavorful dish.
  • Use Fresh Herbs: Fresh herbs like oregano, rosemary, and basil add a burst of flavor to this dish. If you don't have fresh herbs on hand, you can use dried herbs, but use half the amount since they are more concentrated.
  • Don't Overcook the Vegetables: It is essential to cook the vegetables until they are tender-crisp but still retain their vibrant color and texture. Overcooking will make them mushy and bland.
  • Adjust the Heat: If you find that the sauce is reducing too quickly, adjust the heat to medium-low and continue simmering until the sauce has reached the desired consistency.
  • Serve with Sides: This Italian chicken skillet supper pairs well with a side of rice, pasta, or roasted potatoes. You can also serve it with a simple green salad.

Conclusion:

This Italian chicken skillet supper is a quick and easy weeknight meal that is packed with flavor. The tender chicken, colorful vegetables, and flavorful sauce come together in a delicious dish sure to please the whole family. With a few simple ingredients and some basic cooking skills, you can have a tasty and satisfying meal on the table in no time. So, gather your ingredients, heat your skillet, and let's get cooking!
