¼ cup tapioca flour
2 tablespoons all purpose flour
2 teaspoons garlic salt
1 teaspoon Italian herbs
1 ½ pounds boneless skinless chicken thighs
2 tablespoons olive oil
2 tablespoons butter
2 cloves garlic, minced
1 (8 ounce) can tomato sauce
¼ cup heavy cream
¼ cup milk
1 teaspoon red pepper flakes
1 (16 ounce) bag fresh spinach
2 ounces shaved Pecorino Romano cheese

Steps:

  • Combine tapioca flour, all purpose flour, garlic salt, and Italian herbs in a small bowl. Dredge chicken thighs through the mixture and shake off excess flour.
  • Heat olive oil and butter in a large skillet over medium heat. Add chicken thighs and cook until golden brown, about 5 minutes on each side. Remove chicken from skillet.

2 cloves garlic, grated
Kosher salt and freshly ground pepper
3/4 cup milk
1/2 teaspoon paprika
1/4 teaspoon dried oregano
4 skin-on, bone-in chicken breasts (3 pounds), halved crosswise
1 bulb fennel, cored and thinly sliced, plus 1 tablespoon chopped fronds
1 romaine heart, thinly sliced
1 cup roughly chopped fresh parsley
1 cup extra-virgin olive oil
Juice of 1 lemon
1 1/2 cups peanut oil, for frying

Steps:

  • Combine the flour, half of the garlic, 1 teaspoon salt and a few grinds of pepper in a large bowl; set aside. Combine the milk, paprika, oregano, the remaining garlic, 1 teaspoon salt and a few grinds of pepper in another large bowl. Add the chicken, turning to coat; set aside 15 minutes.
  • Toss the fennel and fronds, romaine, parsley, 2 tablespoons olive oil, the lemon juice, and salt and pepper to taste in a bowl.
  • Heat the remaining 3/4 cup plus 2 tablespoons olive oil and the peanut oil in a large cast-iron skillet over high heat until a deep-fry thermometer registers 350 degrees F. Dredge the chicken in the flour mixture; add to the skillet skin-side down. Fry 8 minutes. Flip; reduce the heat to medium high. Fry until golden and cooked through, 8 more minutes. 1/2 cup milk
1 cup cornmeal
2 tablespoons Italian seasoning
1/4 cup Parmesan
2 each chicken legs, thighs, and wings leftover from Chicken Scaloppine, recipe follows
Kosher salt and freshly ground black pepper
2 cups canola oil, for frying
1 (4 to 5-pound) whole chicken, cut into parts
1 teaspoon poultry seasoning
Kosher salt and freshly ground black pepper
1/2 cup all-purpose flour
2 tablespoons canola oil
2 tablespoons unsalted butter
1 (14.5-ounce) can chicken broth
2 tablespoons lemon juice
1 tablespoon chopped fresh parsley leaves
1 tablespoon chopped fresh basil leaves

Steps:

  • Preheat the oven to 350 degrees F.
  • Break the eggs into a shallow dish and add the milk. Whisk together until well combined. In another shallow dish mix together the cornmeal, Parmesan, and Italian seasoning.   • In a large skillet over medium-high heat, add the oil and butter. I made this on a whim. Had the stuff and a taste for something different. My daughter is home from college for the summer and my husband was home so we all sat down for a family "table" dinner. I served corn on the cob and rice with this chicken. They loved it! Even made sandwiches with the left overs.

4 large chicken breasts
1 c water
1 large egg
2 c italian bread crumbs
1/2 c olive oil, extra virgin
salt, pepper and garlic salt (may use powder or fresh garlic)

Steps:

  • 1. Wash and pat dry chicken breasts. Slice each breast into thin pieces, I cut the breasts in a diagnal slice. Start heating your olive oil in skillet.
  • 2. Mix water and egg with whisk in flat bowl for dipping. Dip each chicken slice in water-egg mixture. Then press in bread crumbs. I salt pepper and garlic salt them now. Then put in heated oil. Fry each piece for a few minutes til golden brown and turn cooking other side same. It is a continuous thing dipping, breading and frying as about one breast sliced will fill most skillets.
  • 3. Place the done fried chicken slices on a plate covered in a paper towel to absorb excess oil. Keep warm while frying up other breasts.

1 3 - 4 lb. chicken, cut into pieces
1 bottle (16 oz) kraft zesty italian salad dressing
1 tsp minced garlic
butter-flavored cooking spray
BREADING
1 c self-rising flour
1/2 c self-rising cornmeal
1 tsp black pepper
1/2 tsp garlic salt

  • 1. In a large, plastic zip-lock bag, mix salad dressing and garlic. Add chicken, seal the bag and turn it over seeveral times to coat the chicken. Refrigerate for at least 1 hour or up to overnight, turning occasionally.
  • 2. Heat the oven to 425 F. Spray a shallow baking sheet with the cooking spray.
  • 3. In another zip-lock bag, combine the breading ingredients and shake to combine well.
  • 4. Remove chicken pieces one at a time from marinade and place it into the breading bag. Coat the chicken piece with breading and shake off the access. Place the chicken, bone-side down, on the prepared baking sheet. Continue with all of the chicken pieces.
  • 5. Bake for 35 to 40 minutes or until the juice of the chicken is clear when cut into the thickest piece.

4 chicken breasts, boneless and skinless
1 c bread crumbs, dry
1 Tbsp italian seasoning
1 tsp salt
1/4 tsp black pepper
1/2 tsp crushed red pepper
1/2 tsp garlic powder
1/2 tsp onion powder
1 Tbsp dried parsley
a little less than a 1/4 inch of olive oil to fry in.
FLOUR AND EGG WASH
1/2 c flour
1 large egg
1 Tbsp water

  • 1. Place chicken in a bag and pound it, so that the thickness is even. (about 1/4 inch thick or so)
  • 2. In a shallow bowl (I like to use a pie plate) add the bread crumbs, Italian seasoning, salt, pepper, garlic & onion powder and crushed red pepper. Mix well
  • 3. Put flour in another shallow bowl or plate. Next beat egg with the water in yet another shallow dish. Line them up, flour, egg wash then bread crumb mixture.

  • 5. If oil is hot, place chicken in skillet and fry for about 5 minutes each side or till completely cooked through. Drain on a rack or on a paper towel.
