When I was first married, I wasn't a great cook. Twenty years later, I have many dishes I'm proud of, including this family favorite. Basil, oregano and Romano cheese give these beans their Italian accent. I serve them with broiled steak, pork roast, lamb chops or pork chops. -Andrea Ibzag, Gordon, Wisconsin

GARLIC ITALIAN GREEN BEANS

Garlic Italian Green Beans image

An easy way to prepare green beans that will usually even get those who don't like green beans to eat them :) These come a little better if you thaw the green beans first -in fridge for a few hours, or if time constricted - I have popped them in the microwave for a few minutes. The measurements for dry ingredients are approximate - you can play with them an adjust to your own taste - I usually don't measure mine. This recipe doubles well.

Tips:

  • For the best flavor, use fresh green beans. If using frozen beans, thaw them completely before cooking.
  • Trim the ends of the green beans before cooking. This will help them cook evenly.
  • To blanch the green beans, bring a large pot of salted water to a boil. Add the green beans and cook for 2-3 minutes, or until they are bright green and tender.
  • Immediately remove the green beans from the boiling water and plunge them into a bowl of ice water. This will stop the cooking process and help the green beans retain their color.
  • Drain the green beans and pat them dry.
  • Heat the olive oil in a large skillet over medium-high heat. Add the garlic and cook for 1 minute, or until fragrant.
  • Add the green beans, salt, and pepper to the skillet. Cook for 5-7 minutes, or until the green beans are heated through.
  • Serve the green beans immediately.

Conclusion:

These Italian green beans are a delicious and easy side dish that can be enjoyed by people of all ages. They are perfect for a weeknight meal or a special occasion. The bright green color of the beans and the savory flavor of the garlic and olive oil make them a dish that everyone will love.
