Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, mix together ground beef, eggs, bread crumbs and ketchup. Season with Italian-style seasoning, oregano, basil, garlic salt, diced tomatoes and cheese. Press into a 9x5 inch loaf pan, and cover loosely with foil.

1/4 cup plus 2 tablespoons extra-virgin olive oil
4 teaspoons (about 6 cloves) chopped garlic
2 medium onions, diced
2 red peppers, seeded, small diced
1/2 cup chopped basil leaves
2 tablespoons chopped parsley leaves
4 eggs
1 teaspoon salt
1/2 teaspoon black pepper
2 cups grated Parmesan
1 1/2 cups breadcrumbs
3 pounds ground beef
2 tablespoons Worcestershire sauce
2 tablespoons balsamic vinegar
1 cup marinara sauce

Steps:

  • Preheat oven to 350 degrees F.
  • Heat 1/4 cup of the olive oil in a medium saute pan over medium heat and add the garlic. Saute 1 minute and then add the peppers and onions and saute until just soft. Let cool.
  • Whisk together the basil, parsley and eggs in a small bowl, and then add the salt and black pepper. Combine the Parmesan and breadcrumbs in another small bowl. Thoroughly combine the meat, herbs and eggs, Parmesan and breadcrumbs, the Worcestershire, vinegar and remaining 2 tablespoons olive oil together in a large bowl using your hands, making sure not to overmix.
  • Pack the meat mixture into an oiled loaf pan, if you do not have a loaf pan, form the meat mixture into a loaf shape on an oiled oven tray or baking dish. Top with the marinara making sure to spread evenly over the top.
  • Bake for approximately 50 to 60 minutes or until an instant-read thermometer registers 160 degrees F in the middle of the meatloaf. Remove from the oven and let rest for 5 minutes. Slice and serve.

  • Heat oven to 375°F. Line 15x10x1-inch pan with foil; spray foil with cooking spray. In large bowl, beat eggs. Stir in ground beef, bread crumbs, Parmesan cheese, basil, salt, pepper, garlic and 1/2 cup of the pizza sauce until well combined.
  • On large sheet of foil, shape beef mixture into 12x10-inch rectangle. Top evenly with provolone cheese, roasted peppers and olives to within 1/2 inch of edges. Starting with one 10-inch side, roll up; press seam to seal. Place seam side down in pan.

1 pound ground pork
1 pound ground veal
1 cup milk
1 cup bread cubes (3 or 4 slices Italian country bread, crusts removed)
1/2 cup finely grated pecorino Romano
2 tablespoons minced garlic
1 onion, cut into small dice
2 eggs
2 tablespoons dried oregano
1/2 cup chopped flatleaf parsley
Fine sea salt and freshly ground black pepper
Olive oil, for greasing
1 cup canned plum tomatoes, crushed
2 tablespoons tomato paste
1 medium carrot, diced
1 stalk celery, diced

Steps:

  • 1. Preheat the oven to 350°F.
  • 2. Put the beef, veal, and pork into a bowl and kneed them together.
  • 3. Pour the milk into a bowl and soak the bread in it, squeezing it into a paste. Add the soaked bread to the bowl with the meat and work them together as though you were kneading dough. Add the cheese, garlic, onion, eggs, oregano, and parsley. Season with salt and pepper and knead again until well incorporated.
  • 4. Oil a large roasting pan with the olive oil. Form the meat mixture into a large loaf in the center of a roasting pan.
  • 5. Stir in the plum tomatoes, tomato paste, and 1 cup water together in a bowl and pour the mixture evenly over the meatloaf. Scatter the carrots and celery in the pan around the loaf.
  • 6. Put the pan in the oven and bake until a skewer inserted in the center of the loaf comes out warm, about 1 1/2 hours. If the loaf begins to look dry while cooking, tent it with aluminum foil. Remove the pan from the oven and let it cool slightly.
  • 7. Slice the meatloaf into servings, put 1 serving on each plate and spoon pan gravy and vegetables over and around the meatloaf.

I was making my annual Christmas Pasta for the holiday and my mom and I bought duplicate meats so we had lots of leftover hot and sweet sausage and ground beef. Well, the next day, this recipe was born.

2 tablespoons extra-virgin olive oil, plus some for drizzling
1 red bell pepper, finely chopped
1 large onion, chopped and divided
2 ribs celery, chopped
1 cup shredded carrots
Salt and pepper, for seasoning, plus coarse black pepper for finishing sauce
1/2 pound ground beef
3/4 pound bulk hot sausage
3/4 pound ground sweet sausage
1 egg
3/4 cup bread crumbs, 3 generous handfuls, Italian or plain
1/2 cup grated Parmigiano or Romano, a couple of handfuls
1/8 pound pancetta, 4 slices, chopped
3 cloves garlic, chopped
Splash red wine
1/2 cup beef stock
1 can petite diced tomatoes or stewed tomatoes
1 tablespoon Worcestershire sauce
2 teaspoons hot sauce
Serving suggestion: green salad

Steps:

  • Preheat oven to 425 degrees F.
  • Heat a small skillet over medium heat with 2 tablespoons extra-virgin olive oil. When the oil is hot, saute the red pepper, half the onions, celery and carrots together, 5 minutes, season with salt and pepper then remove to a plate to cool.
  • Mix ground beef and sausages with egg, bread crumbs, cheese, and cooled vegetables. Form 4 large oval shaped patties no more than 1 1/4 inches thick then drizzle with extra-virgin olive oil. Place in the oven on a cookie sheet and bake 17 to 18 minutes, until cooked through.
  • Heat a medium sauce pot over medium high heat. Add a drizzle of EVOO to the pan and the pancetta. Let the pancetta crisp up a bit and render fat, then add onions and garlic and cook until tender, 8 to 10 minutes. Add a splash of red wine to deglaze the pan. Stir in the beef stock and tomatoes and season sauce heavily with coarse black pepper. Add Worcestershire and hot sauce and reduce heat to warm.
  • Serve meatloaves with Italian barbecue sauce on top and green salad alongside.

1/4 cup grated onion
3 to 4 cloves garlic, grated or finely chopped
Olive oil cooking spray
1 cup ketchup
2 tablespoons store-bought balsamic drizzle (or reduce 1/4 cup vinegar and 1 tablespoon brown sugar in a small pot to about 2 tablespoons of drizzle)
1 tablespoon Worcestershire sauce
Chicken stock, for warming
Italian-American crusty white bread, for serving
Toppings: lettuce, tomato, red onion, thinly sliced fresh mozzarella and torn fresh basil leaves

  • Preheat the oven to 375 degrees F. Line a baking sheet with parchment paper.
  • Place the meat in a mixing bowl and sprinkle with salt and pepper. Trim the crusts off the bread and place in a small bowl, cover with milk and soak to soften. 1 large zucchini, cut in half lengthwise
1 teaspoon garlic salt
¼ cup olive oil
1 onion, chopped
1 teaspoon minced garlic
1 ½ pounds ground beef sirloin
2 eggs
1 ½ cups Italian seasoned bread crumbs
1 tablespoon dried basil
¼ cup grated carrot
⅓ cup grated Parmesan cheese
1 (26.5 ounce) can spaghetti sauce, divided
1 cup shredded mozzarella cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Scoop out and discard zucchini seeds, leaving the hollowed-out shells. Sprinkle the garlic salt into the hollowed-out zucchini, and set aside. Heat olive oil in a skillet over medium heat, and cook the onion and garlic until the onion is translucent, about 5 minutes. Remove from heat and allow to cool.

  • Bake in the preheated oven until the meat is no longer pink in the center and the zucchini are tender, about 45 minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C). Sprinkle the mozzarella cheese over the zucchini, and return to oven until the cheese melts, about 5 more minutes. Heat the remaining spaghetti sauce in a small saucepan over medium heat while the zucchini boats are cooking. Serve the zucchini boats with the additional sauce on the side.

100 g pasta (like rotini, or lasagne, or spaghetti)
1/4 cup breadcrumbs
1 tablespoon white wine
12 ounces ground round
12 ounces ground turkey
2 garlic cloves, finely chopped
3 1/2 ounces mushrooms, finely chopped
2 eggs, beaten
1 tablespoon italian seasoning
1/4 cup sour cream
4 green onions, finely chopped
2 tablespoons parsley, finely chopped
1/4-1/2 cup spaghetti sauce

Steps:

  • Grease loaf pan.
  • Cook pasta until al dente (good way to use up leftover pasta), drain set aside.
  • Soak breadcrumbs in wine.
  • Add beef, turkey, eggs, garlic, mushrooms, Italian seasoning, green onions and sour cream to breadcrumb mixture.
  • Place half the meat mixture into greased loaf pan.
  • Form a trough through the meat along the length of the loaf pan.
  • Fill the trough with the pasta and two tablespoons of sauce.
  • Cover with remaining meat mixture.
  • Top with spaghetti sauce.
  • Bake for 50-60 minutes draining excess fat and juices at least twice.

1 1/2 lbs meatloaf mixture (ground beef, pork, veal)
1/2 cup Italian seasoned breadcrumbs
1 egg
1 garlic clove, minced
1/4 small white onion, grated
3 tablespoons parmigiano, grated
2 tablespoons flat leaf parsley, chopped
1 cup arugula leaves or 1 cup Baby Spinach
6 slices prosciutto
6 slices provolone cheese, deli sliced
salt and pepper
olive oil, for drizzling

Steps:

  • Pre-heat oven to 350°F.
  • Mix meat and remaining meatloaf ingredients.
  • Flatten meat mixture out on a wax paper lined cookie sheet in a thin layer 1/2" thick x 12" long x 6 to 8" wide.
  • Cover meat with a layer each of arugula (or spinach), prosciutto and cheese.
  • Use the wax paper to help roll up the meat into a large log working across the 6 or 8" side, resulting in a 12" log.
