ITALIAN ROASTED VEGETABLE MEDLEY

Italian Roasted Vegetable Medley image

Provided by Elyse

Yield 6-8

Number Of Ingredients 6

3 cups broccoli florets
3 cups cauliflower florets
3 cups baby carrots
2 Tablespoons olive oil
1 Tablespoon dry Zesty Italian dressing mix
1 Tablespoon shredded parmesan cheese

Steps:

  • Preheat oven to 425 degrees F.
  • Spread broccoli, cauliflower and carrots on a large baking sheet.
  • Drizzle olive oil over vegetables.
  • Sprinkle on Italian dressing mix and shredded parmesan.
  • Toss vegetables with hands until evenly coated in oil and seasoning.
  • Bake for 20 minutes, or until vegetables are soft.

Tips:

  • Use a variety of nuts. This will give your medley a more complex flavor and texture. Experiment with different types of nuts, such as almonds, walnuts, pecans, hazelnuts, and pistachios.
  • Toast the nuts before using them. This will bring out their flavor and make them more crunchy. To toast nuts, spread them in a single layer on a baking sheet and bake them at 350 degrees Fahrenheit for 10-15 minutes, or until they are golden brown and fragrant.
  • Add other ingredients to your medley. This could include dried fruits, seeds, or spices. Some popular additions include raisins, cranberries, sunflower seeds, pumpkin seeds, cinnamon, and nutmeg.
  • Store your nut medley in an airtight container. This will help to keep them fresh and prevent them from going stale. You can store your nut medley at room temperature for up to two weeks, or in the refrigerator for up to six months.

Conclusion:

An Italian nut medley is a delicious and versatile snack or addition to many dishes. It is easy to make and can be customized to your liking. With a variety of nuts, dried fruits, seeds, and spices to choose from, the possibilities are endless. So next time you are looking for a healthy and satisfying snack, reach for an Italian nut medley.
