1 jarred roasted red pepper
One 8-ounce tube refrigerated crescent roll dough
1/4 cup pesto, plus more for serving
16 frozen mozzarella sticks, such as Farm Rich® Mozzarella Sticks (from one 24-ounce box)
Marinara sauce, for serving

Steps:

  • Preheat the oven to 350 degrees F. Line 2 rimmed baking sheets with parchment.
  • Cut each slice of prosciutto into 4 pieces, each about 1 1/2 inches by 3 inches. Cut the roasted red pepper into 16 strips, each about 1/2 inch by 2 inches.
  • Unroll the dough on a cutting board. Spread the pesto on the dough in an even layer. Cut the dough along the perforated lines to create 8 triangles. Cut each triangle in half to create 16 long, thin triangles.

1 egg

1 (28 ounce) jar of favorite marinara sauce

1 small onion finely chopped

1 (10-ounce) package frozen spinach, thawed and squeezed dry
15 ounces ricotta cheese
1 large egg
1/2 cup grated Parmesan Regganio cheese
1 cup fresh chopped very fine mushrooms (Sautéed in butter and drained)
3 cups grated mozzarella cheese
1 teaspoon dried basil
1/2 teaspoon dried oregano
1/4 teaspoon ground black pepper
2 jars Bertolli Tomato and Basil spaghetti sauce

  • Preheat the oven to 350 degrees F. Lightly grease a 9 x 13 casserole dish. Bring a large pot of water to a boil. Add the salt and the lasagna and cook until al dente, as per package, cool off with cold water and drain. In a medium skillet, heat 1 tablespoon of olive oil over medium heat. Add the onions and garlic and cook, stirring, until very soft, 6 to 7 minutes. Add the sausage and cook, stirring, until cooked and browned, drain well. Cold cuts and cream cheese are a staple in our refrigerator, so when I'm not in the mood for bread, I like to make these "naked" sandwiches, which also make great appetizers. The possible combinations are endless, but these "gentlemen" are my favorites. You can also make these with a tortilla as the outside layer. Amounts are approximate (play around with it) and listed per roll-up.

1 slice turkey breast
1/2 tablespoon cream cheese
1 teaspoon cranberry sauce
1 slice ham
1/2 tablespoon cream cheese
1 teaspoon apricot jam
1 slice salami
1/2 teaspoon cream cheese
1/4 teaspoon minced olives or 1/4 teaspoon pepperoncini pepper

Steps:

  • For each roll-up, spread the cream cheese as evenly as possible across the slice of meat (but don't be anal about it if it glops up a bit--room temperature cream cheese is ideal).
  • Then spread or sprinkle the other filling on top.
  • Roll it up.
  • Make as many as you want.
  • Eat or serve as is or cut on the horizontal into pinwheels (not recommended for the salami unless you've got a tortilla on the outside).
  • Optional: garnish with toothpicks securing a cranberry for each American, a dried apricot for each Englishman, and an olive for each Italian.

BROWN TURKEY, DRAIN AND SET ASIDE. IN LARGE SKILLET COOK ONION AND GARLICIN 1 T. OLIVE OIL.
1 lb ground turkey
1 large onion chopped
1 clove garlic chopped
PUREE IN FOOD PROCESSOR
6 oz water
2 can(s) tomatoes
6 oz can tomato paste
ADD ONION AND GARLIC TO SKILLET THE FOLLOWING:
1 Tbsp dried parsley
3 Tbsp sugar
1 tsp basil
1 Tbsp salt
1 tsp dried oregano
1/2 tsp pepper
ADD BROWNED TURKEY. BOIL LASAGNA NOODLES UNTIL TENDER
in large bowl mix:
1 box frozen spinach, thawed
1 qt ricotta cheese, low-fat
1 c grated mozzerella
1/3 c grated parmesan cheese
2 eggs beaten
2 tsp dried parsley
1 tsp salt

  • 1. Pour 1/2 sauce in bottom of large baking dish. Spread 2-3 T.of the cheese and spinach mixture on lasagna strip and roll up . Place in pan seam side down.
