- FOR SAUCE:
- Heat oil in heavy large saucepan over medium heat. Add onion, carrots and garlic; sauté until softened, about 12 minutes. Add beef and sausages to pan; sauté until cooked through, breaking up meat with back of spoon, about 5 minutes. Add remaining ingredients. I don't like lasagna!!! But, I do like this one. It took me a good 10 years to come up with a lasagna recipe that I lilke. I happen to like cottage cheese in my lasagna, but if you prefer ricotta, substitute. All four food groups are in this recipe. Hope that you enjoy it as much as I do!

- Rinse cooked lasagna noodles and set aside. Be sure that you don't use more than 12 oz. or the lasagna will be too dry.
- Meanwhile, in a dutch oven or other large vessel, put the oil, onion and green bell pepper. Saute over medium heat until the onion is tender.
- Add the sausage and garlic and stir-fry until well browned, chopping up the meat as you stir, to make sure all of the pieces are small.
- Add the diced tomatoes, tomato paste, parsley, oregano, basil and 1 teaspoons salt. Reduce heat to low and simmer for about 15 minutes, stirring occasionally.
- Meanwhile, press out the water from the thawed spinach so that it is very dry. Put the spinach into a medium-size mixing bowl.
- Add the cottage cheese, egg, 1/4 cup Parmesan cheese, 1 teaspoons salt and black pepper to the spinach. Stir until well mixed.
- In another medium-size bowl put the grated Mozzarella cheese.
- In a lasagna pan that you have oiled, put down 1/3 of the tomato-meat sauce.
- Cover with 1/2 of the lasagna noodles.
- Top with 1/2 of the spinach-cottage cheese filling.
- Top with half of the mozzarella cheese.
- Repeat using 1/3 of the tomato-meat sauce, remaining noodles, remaining spinach filling and mozzarella cheese.
- Top with the remaining 1/3 of the tomato-meat sauce and sprinkle 1/4 cup Parmesan cheese over the very top.
- Bake in a 350 degrees oven for 45 minutes.
- You might wonder whether or not there is enough tomato sauce, but once the lasagna heats up and the cheese gets gooey, there is enough sauce. I don't like a a lasagna with lots of runny heavy tomato sauce that covers the taste of everything else in the lasagna. If you feel like you need a bit more, add an 8 oz. can of tomato sauce to the tomato-meat sauce.

I'm always looking for different lasagnas...a break from the red sauce ones. This is from October 2008 Martha Stewart mag and it is really, really delish. This, of cours, has my tweaks in it...more cheese, light milk, etc. They show it in individual baking dishes, but I like to make it in one 9x13 pan...seems a little less precious and perfect and then people can easily go back for seconds!

- Preheat oven to 400 degrees.
- Make the filling: heat oil in a large saute pan over med-high heat.
- Add sausage, crumble and cook til golden, 6 minutes.
- Transfer to paper-towel lined plate.
- Reduce heat to medium, add shallots to pan with drippings still in pan, cook til translucent, about 4 minutes.
- Add chard and cook, til starts to wilt, 2 minutes.

- Spread about 1/2 cup of bechamel on bottom of plan.
- Put one layer of lasagna noodles.
- Top with half of the chard mixture.
- Then top with half of sausage mixture.
- Then 1/3 of shredded cheese.
- Then another 1/2-1 cup of the bechamel.
- Repeat with another layer of noodles, the rest of the chard, the rest of the sausage, another 1/3 portion of the cheese and more bechamel.
- Finish with a last layer of lasagna noodles, pour the rest of the bechamel sauce over and top with remainder of shredded fontina cheese.
- Sprinkle sparingly another 1/2 cup of parmesan over top.
- Bake until golden browned and bubbly, about 30-35 minutes.
- Let cool for 10 minutes before serving.

This came to me in a 'round about way from the Betty Crocker website. It doesn't appear to be on Food.com. We really enjoyed it. I used pound ground sausage with Sage as I had on hand and added 2 tsp ground up Fennel Seed to give it the "Italian" touch. Who knew you could make lasagna in a crock pot? Mine tapers in toward the bottom, so the shape isn't "traditional but it cooked nicely. The flavor was great. Hope you like it!

- Preheat oven to 400. Make the filling: Heat oil in a large saute pan over medium-high heat. Add sausage, and cook, stirring, until golden and cooked through, 5 to 6 minutes. Transfer sausage to a paper-towel-lined plate. Reduce heat to medium, and add shallots to drippings in pan. Cook, stirring often, until softened and translucent, about 4 minutes. Add chard, and cook, stirring frequently, until just starting to wilt, 1 to 2 minutes. Add garlic, lemon zest, and salt, and season with pepper. Cook, stirring often, until chard wilts completely, about 3 minutes. Stir in lemon juice. Transfer to a colander to drain. Make the bechamel: Melt butter in a medium saucepan over medium heat. Add onion, salt, and red-pepper flakes, and cook, stirring occasionally, until onions are slightly translucent, about 5 minutes. Stir in flour and cook, stirring, for 1 minute. Whisk in milk, a little at a time, until incorporated. Bring to a boil, stirring often, then reduce heat to low. Simmer, stirring gently and often, until thickened and creamy, about 10 minutes. Remove from heat. Place a piece of parchment flush against the surface of sauce to prevent a skin from forming. This recipe is set for a large family , dinner party or just really good eaters, but you can always warm left overs or cut it down to your needs. This is a multi-task recipe but well worth the work. - Cook noodles until tender but not well done. Drain and rinse to help prevent from sticking together. Meanwhile, cook ground italian sausage in a large, deep skillet or pan until no longer pink. Rope or link style italian sausage is okay, just cut the casing off before cooking. Add the ground beef to the skillet. Cook untill all meat is starting to brown. Also meanwhile, combine the cheeses and parsley in a large bowl. Mix well.
- Use a large baking pan (I use a 13" wide x 18" long x 3" deep) Spread a layer of sauce across the bottom of the pan, slightly more than just enough to cover the entire surface. Place a layer of noodles on top of the sauce, overlapping the edges just a bit. Spoon some of the cheese mixture (about 1/4) on top of the noodles (in even globs). Sprinkle with 1/4 of the meat mixture. Spoon some sauce on top. Then another layer noodle -- cheese -- meat -- sauce -- noodle -- cheese -- meat -- sauce -- noodle -- cheese -- meat -- sauce. Then top with another layer of noodle and sauce spread evenly on top. Remember to slightly overlap the noodles in each layer. (You may have some left over noodles and sauce which is great to spread a little sauce on a noodle and roll up as a snack for an impatient child.)
- Cover tightly with foil. Cook in a preheated oven at 325 degrees on center rack for 1 hour. Let cool at least 20 minutes before cutting to help prevent the cheese from running. Serve with a side salad and garlic bread.
CHEATERS LASAGNA WITH ITALIAN SAUSAGE
Steps:
- Preheat the oven to 350. Spoon one third of pasta sauce into a 9 x 13 baking dish. Place half of ravioli on top of sauce in one layer, squeezing to fit as necessary. Sprinkle with all of cooked sausage, all of spinach, and half of mozzarella. Layer on remaining ravioli. Top with remaining sauce, remaining mozarella, and parmesan. Cover with foil and bake for 20 minutes. Uncover and bake until bubbling, 5-10 minutes more.

- Crumble Italian sausage into a large skillet. Brown sausage until no longer pink and drain onto paper towels. Wipe out skillet with paper towels. Add 1 tablespoon olive oil to pan and heat until shimmering. Add onion and saute until translucent.
