BROCCOLI RABE WITH HOT ITALIAN SAUSAGE

Broccoli Rabe With Hot Italian Sausage image

Provided by Molly O'Neill

Categories     main course, side dish

Time 20m

Yield Four servings

Number Of Ingredients 6

2 bunches broccoli rabe (about 1 pound each), ends trimmed off
1 pound hot Italian sausage, casings removed
1 medium onion, peeled and thinly sliced
1/2 cup chicken broth, homemade or low-sodium canned
1 teaspoon salt
Freshly ground pepper to taste

Steps:

  • Bring a large pot of lightly salted water to a boil. Add the broccoli rabe and blanch for 1 minute. Drain and set aside.
  • Place the sausage in a large skillet over medium-high heat. Cook, breaking up the sausage with the back of a fork until crumbly. When the sausage begins to release its fat, add the onion and cook, stirring frequently, until the sausage is browned, about 7 minutes. Pour off as much of the fat as possible.
  • Reduce the heat to medium and stir in the chicken broth. Lay the broccoli rabe over the sausage, season with the salt and pepper, cover with a lid and cook until the broccoli rabe is tender, about 10 minutes.
  • Divide the broccoli rabe among 4 plates. Spoon the sausage and broth over it and serve immediately with roasted potatoes.

Tips:

  • To easily remove the broccoli rabe's tough stems, hold the florets upside down and run a knife down the stem, starting from the florets and moving towards the root. The florets will naturally fall away from the stem.
  • If you don't have chicken broth on hand, you can substitute vegetable broth or water. However, chicken broth will add more flavor to the dish.
  • If you like spicy food, you can add a pinch of red pepper flakes to the dish. Alternatively, you can use a spicy Italian sausage.
  • Feel free to add other vegetables to the dish, such as sliced mushrooms, zucchini, or bell peppers.
  • Serve the dish with a side of grated Parmesan cheese and crusty bread for a complete meal.

Conclusion:

This Italian sausage with farfalle and broccoli rabe is a quick and easy weeknight meal that is packed with flavor. The combination of savory sausage, tender broccoli rabe, and creamy farfalle pasta is sure to please everyone at the table.
