1 package (1/4 ounce) active dry yeast
1 teaspoon plus 2 tablespoons sugar, divided
1/4 cup warm water (110° to 115°)
1 cup pizza sauce
1/4 cup plus 2 tablespoons butter, melted, divided
1 egg
1 teaspoon salt
3/4 teaspoon dried basil
3 to 4 cups all-purpose flour

Steps:

  • In a large bowl, dissolve yeast and 1 teaspoon sugar in warm water; let stand for 5 minutes. Add the pizza sauce, 1/4 cup butter, egg, salt, basil, 2 cups flour and remaining sugar; beat until smooth. Stir in enough remaining flour to form a firm dough., Turn onto a floured surface. Knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1-1/2 hours. , Punch dough down. Turn onto a lightly floured surface; divide into 15 pieces. Shape each into a 2-in. ball. Place 2 in. apart on greased baking sheets. 1/4 cup extra-virgin olive oil
1 small red chile, chopped or thinly sliced
1 large clove garlic, thinly sliced
1 round loaf crusty bread with or without sesame seeds
1 large ripe tomato
Salt
2 tablespoonfuls capote capers or sliced caper berries
A scant handful pitted black olives, coarsely chopped
8 thin anchovy fillets, drained, optional

Steps:

  • Heat about 1/4 cup extra-virgin olive oil in a small skillet over medium heat. Add the chile and garlic and saute for 2 to 3 minutes. Turn off the heat and cool a couple of minutes.
  • Halve the bread across horizontally and toast or char.
  • Halve the tomato across horizontally and rub the flesh vigorously into the toasted surface of the bread and season with salt, to taste. If you are garnishing with anchovies skip the salt. 1 medium head cabbage
1/2 cup shredded carrot
1/4 cup finely chopped onion
1/4 cup egg substitute
1 can (10-3/4 ounces) reduced-sodium condensed tomato soup, undiluted, divided
1 can (10-3/4 ounces) reduced-fat reduced-sodium condensed vegetable beef soup, undiluted, divided
2 tablespoons Italian seasoning, divided
1/4 teaspoon cayenne pepper

1 pound lean ground turkey

  • Cook rice according to package directions. Meanwhile, cook cabbage in boiling water just until leaves fall off head. Set aside 10 large leaves for rolls. If you reside in the U.S. then use all bread flour, Canadian residents may use all-purpose flour --- I most always add in 1-1/2 cups of finely cubed cheddar towards the end of kneading, it really adds flavor to these buns

1 1/2 cups water, divided
1 teaspoon sugar
3 teaspoons yeast
3 1/2 cups white flour (might need more)
1 teaspoon salt (can use 1-1/4 teaspoons)
1 tablespoon sugar
2 tablespoons melted butter (can use 3 tablespoons)

Steps:

  • Place the kneader attachment onto the stand mixer.
  • Proof the yeast with 1 teaspoon sugar in 3/4 cup water for 10 minutes or until foamy.
  • In the stainless steel mixing bowl place 3-1/2 cups flour, salt, 1 tablespoon sugar and melted butter.
  • When the yeast has proofed add to the bowl along with 3/4 cup warm water.
  • Start kneading adding in more flour only if needed (total kneading time should take about 8 minutes) do not add in too much flour or the buns will be heavy, when finished kneading the dough should feel soft but semi-sticky and smooth and should stick to your hands only slightly when removing from the bowl.
  • Remove the dough to a very lightly flour-dusted surface; cover with clean tea towel and let rest 5 minutes.
  • Shape into a ball (the dough will come together nicely after resting).
  • Place into a large greased deep glass bowl.
  • Cover and let rise for about 60-90 minutes.
  • To check if the dough is ready to be punched down, very gently stick two fingers about 1/2-inch into the dough, the dough is ready when the finger marks remain.
  • Punch down dough and slice in half.
  • Slice each half into 4 even pieces.
  • Shape each piece into a round ball.
  • Place balls spacing well apart onto a 10 x 15-inch greased baking sheet (2 balls across and 4 balls down).
  • Cover and let rise 30-40 minutes.

3 ½ cups all-purpose flour
2 teaspoons salt
1 teaspoon active dry yeast
2 ½ tablespoons extra-virgin olive oil
1 cup water
6 tablespoons water
1 (28 ounce) can whole peeled tomatoes
5 tablespoons extra-virgin olive oil, divided
2 tablespoons unsalted butter
4 cloves garlic, finely grated
1 medium shallot, minced
1 tablespoon dried oregano
1 teaspoon red pepper flakes
1 tablespoon white sugar
kosher salt to taste
¼ cup finely grated Pecorino Romano cheese

Steps:

  • Whisk together flour, salt, and yeast in the bowl of a stand mixer fitted with the dough hook attachment. Add olive oil and 1 cup plus 6 tablespoons water. Knead on low speed just until dough comes together, about 3 minutes. Let dough rest for 10 minutes. Knead once more on low speed for 10 minutes until dough pulls away from the sides of the bowl.

  • Generously grease the inside of a 13x18-inch rimmed baking sheet with 3 tablespoons olive oil. Remove dough from the refrigerator 2 hours before baking. Turn dough out onto a lightly floured surface and form into a flat ball. Transfer ball to the greased baking sheet. Coat the ball on all sides with olive oil using your hands, loosely cover with plastic wrap and let dough rise in a warm spot for 1 hour. The dough should spread out . Carefully stretch and push the dough into the corners and edges of the pan. Cover loosely, and let rise for 1 hour longer.
  • Adjust an oven rack to the upper middle position. Preheat the oven to 450 degrees F (230 degrees C).
  • When dough has risen, gently dock center with fingertips and use your hands to create a risen ridge about 1 inch wide around the edge.
  • Spread dough generously with sauce, leaving the raised 1-inch edge without the sauce. Bake until edges are lightly browned and crisp, about 20 minutes. Remove from oven and allow to cool at room temperature for at least 15 minutes.
  • Sprinkle with Pecorino Romano cheese, cut into slices, and serve.
