1 can (6 ounces) tomato paste
6 tablespoons water
1 tablespoon minced fresh parsley
1-1/2 teaspoons Worcestershire sauce
1 teaspoon dried basil
3/4 teaspoon dried oregano, divided
8 ounces ziti or small tube pasta
1 cup part-skim ricotta cheese
1 cup shredded part-skim mozzarella cheese
1/4 cup grated Parmesan cheese, divided
1 large egg, lightly beaten
1/4 teaspoon salt
1/4 teaspoon pepper

Steps:

  • In a large saucepan, cook beef and onion over medium heat until meat is no longer pink. Add garlic; cook 1 minute longer. Drain. , Stir in the spaghetti sauce, tomatoes, tomato paste, water, parsley, Worcestershire sauce, basil and 1/2 teaspoon oregano. Cover and simmer for 3 hours, stirring occasionally. , Cook pasta according to package directions; drain. In a large bowl, combine the ricotta, mozzarella, 2 tablespoons Parmesan, egg, salt and pepper., Spread 1 cup meat sauce into a greased 13x9-in. baking dish. Layer with half of the pasta, a third of the meat sauce and half of the cheese mixture. Repeat layers. Top with remaining sauce. 1/2 lb Italian sausage, cut into coins
1/2 cup margarine
1 cup sliced mushrooms
1 cup green pepper, cut into strips
1/3 cup chopped onion
1/3 cup flour
2 1/4 cups milk
2 cups shredded cheddar cheese
1/2 cup parmesan cheese
1/3 teaspoon pepper
3 cups ziti pasta

Steps:

  • In a 4 quart saucepan, brown sausage, remove and drain.
  • Melt butter and cook mushrooms, peppers and onion until tender, but not brown. Blend flour into vegetable mix; gradually stir in mil. Cook stirring constantly over medium low heat until mixture boils. Boil and stir one minute.
  • Blend in 1 1/2 cups cheddar cheese, Parmesan cheese and pepper until cheeses are melted and mix is smooth.
  • Cook Ziti and drain.
  • Stir hot cooked ziti and sausage into vegetable cheese mixture. Pour into a butter 2 quart casserole. Sprinkle with remaining 1/2 cup cheddar cheese.
  • Bake covered at 350 degrees for 30 minutes.

2 1/4 cup milk
2 cups shredded cheddar cheese
1/2 cup grated parmesan cheese
1/2 tsp pepper
8 oz uncooked ziti

Steps:

  • In a 4 qt saucepan, brown sausage, remove from pan and drain off fat. Melt butter and cook mushrooms, pepper and onions until tender. Blend flour into vegetable mixture, gradually stir in milk. Cook stirring constantly over medium-low heat until mixture begins to boil. Boil and stir 1 minute. Blend in 1 1/2 cups cheddar, Parmesan and pepper until cheeses are melted and mixture is smooth. Cook ziti according to package instructions. Pour into buttered 2 qt casserole. Add vegetable and sausage mix together. Sprinkle remaining cheddar over top and bake at 350 degrees, about 30 minutes.

2 lbs Italian sausage
1 lb ziti pasta (penne or rigatoni)
500 g tomato sauce
3 cups mozzarella cheese
1 cup parmesan cheese
3 tablespoons dried basil
1 tablespoon dried rosemary
1 teaspoon dried oregano
1 tablespoon sugar
2 red chili peppers
1/2 cup extra virgin olive oil

Steps:

  • Add tomato sauce,rosemary,oregano,chili peppers,sugar and basil to a pot.
  • Bring to boil and simmer one hour. Remove chili peppers.
  • Cook pasta to al dente (little chewy). You don't want to overcook it as it cooks in the baking also.
  • Remove sausage from casing and cook in 1/2 cup olive oil over medium high till browned.
  • Add cooked sausage and all the oil (don't drain)to the tomato sauce and mix.
  • Add cooked pasta into a 9x13 baking pan.
  • Add the sausage and sauce over top and toss.
  • Add parmesan on top and then cover with shredded mozzarella.
  • Cover with foil and bake 30 minutes at 350°F (put toothpicks so cheese doesn't stick).
  • Remover foil and continue to bake 10 minutes (watch cheese so it doesn't burn).
  • Remove from oven and let set 10 minutes before serving to allow it to set.
