1 large potato, any type
1/4 large Spanish onion
2 -3 tablespoons butter or 2 -3 tablespoons margarine
2 -3 tablespoons olive oil
salt & fresh ground pepper
aluminum foil, large piece of

Steps:

  • Scrub potato and make 4 slits almost through to bottom.
  • Slice onion into 4 slices to fit into slits in potato.
  • Dot with butter or margarine.
  • Sprinkle with salt and pepper to taste.
  • Drizzle olive oil over all.
  • Wrap tightly in foil, as if to freeze.
  • Place package on rack in BBq and close the lid.
  • (Can also be done in the oven- 400f degrees for 1 hour or until potatoes are soft).
  • In a hot BBq they should be done within an hour, depends on what else you are BBqing.
  • Open packages, adjust seasoning, serve in opened foil.
  • Repeat process for as many potatoes as needed

1 ½ tablespoons butter
6 medium unpeeled potatoes, washed and cut into thick slices
1 onion, sliced
1 green bell pepper, cut into long strips
2 teaspoons garlic powder
salt and ground black pepper to taste

Steps:

  • Preheat an outdoor grill for high heat; close cover. Lay out three 18-inch long pieces of aluminum foil on a work surface, dull side facing up.
  • Smear 1/2 tablespoon butter in the middle of the first piece of foil. Add 1/3 of the potato slices, onion, and bell pepper. Sprinkle with 1/3 of the garlic powder; season with salt and pepper. Fold up the edges of the foil over the vegetables to create an almost leak-proof packet, making sure to seal the edges. Repeat with last 2 pieces of foil and the remaining ingredients to make 2 more packets.
  • Reduce the heat of the grill to medium. Place foil packets on the grate; cook until potatoes are tender, 20 to 30 minutes.

2 pounds small potatoes (such as baby Yukon Gold, about 1 1/2 inches wide)
2 garlic cloves, smashed
2 small rosemary sprigs
¼ cup olive oil
1½ teaspoons kosher salt

2 potatoes, scrubbed well
1 garlic clove, minced
1 tablespoon coarse salt
1 teaspoon fresh rosemary, chopped
1 tablespoon olive oil
1 sheet aluminum foil, about 1 1/2 feet long

Steps:

  • Slice potatoes into 1" wide x 1/8" thick slabs.
  • Mix remaining ingredients in a bowl, add potatoes and toss to coat.
  • Place potato mixture onto ½ of the foil; fold over other half and seal edges by pinching halves together to form a packet. Slit the top of the foil packet several times to vent.
  • Place the packet on the grill when the coal is at its hottest and grill for 30 minutes. At about the halfway mark, you may want to open the foil and stir the potatoes, but be careful not to let the oil run out (i.e. don't simply turn packet over) or you will cause fire, soot and general mayhem.
