4 tablespoons coconut oil
3 green onions, chopped
2 shallots, chopped
1 red bell pepper, chopped
1 Scotch bonnet chile, minced
2 garlic cloves, minced
1/2 teaspoon dark brown sugar
1/2 teaspoon ground allspice
1/2 teaspoon ground cinnamon
1/2 teaspoon garlic powder
1/2 teaspoon ground ginger
1/2 teaspoon onion powder
1/2 teaspoon dried oregano

1/4 cup to 1/3 cup dried breadcrumbs
1 cup ketchup
1/4 cup soy sauce

Steps:

  • Heat 2 tablespoons of coconut oil in a medium skillet over medium heat. • Heat the remaining 2 tablespoons coconut oil in a cast-iron skillet over medium-high heat. Add the meatballs and cook until browned on all sides, 1 to 2 minutes per side. Transfer the skillet to the oven and bake 10 minutes.
  • Combine the ketchup and soy sauce in a small bowl. Stir the mixture into the skillet and bake until the meatballs are cooked through, another 10 to 12 minutes.

JAMAICAN FESTIVAL FRIED DUMPLINGS

Jamaican Festival Fried Dumplings image

We had these in Jamaica and they were served with spicy foods (to cool them down). My son wanted them for breakfast since they are slightly sweet. We loved them. I found this recipe at Jamaicans.com and made it with a spicy Jamaican Jerk meatloaf recipe. You tone down the sweetness by cutting down on the sugar.

Tips:

  • Mise en place: Before starting, prep all ingredients and set them aside. This will make the cooking process smoother and more efficient.
  • Choose the right ground meat: For a flavorful and juicy meatloaf, use a combination of ground beef and ground pork. The pork adds richness and moisture to the dish.
  • Don't overmix: Overmixing the meatloaf mixture can result in a tough and dense texture. Mix just until the ingredients are combined.
  • Use fresh herbs and spices: Fresh herbs and spices impart a vibrant flavor to the meatloaf. If using dried herbs, use about 1/3 of the amount called for in the recipe.
  • Shape the meatloaf properly: To ensure even cooking, shape the meatloaf into a compact oval shape. Make sure it is not too thick, or it may not cook evenly in the center.
  • Bake at the right temperature: Bake the meatloaf at a moderate temperature of 350°F (175°C) for about 1 hour, or until a meat thermometer inserted into the center reads 160°F (70°C).
  • Let the meatloaf rest: After baking, let the meatloaf rest for 10-15 minutes before slicing and serving. This allows the juices to redistribute throughout the meatloaf, resulting in a more flavorful and moist dish.

Conclusion:

Jamaican Jerk Meatloaf is a delicious and flavorful dish that combines the classic comfort food of meatloaf with the vibrant flavors of Jamaican jerk seasoning. With its tender texture, juicy interior, and slightly spicy and smoky flavor, this meatloaf is sure to be a hit at any gathering. Whether you're serving it for a weeknight dinner or a special occasion, Jamaican Jerk Meatloaf is sure to please everyone at the table.
