1 1/2 cups packed dark-brown sugar, divided
1 pineapple, peeled, cored, and cut into 1/8-by-4 3/4-inch slices
1 can (13.5 ounces) coconut milk
3 large eggs, lightly beaten
1 tablespoon grated lime zest plus 2 tablespoons juice
2 teaspoons pure vanilla extract
3 cups all-purpose flour (spooned and leveled)
1 tablespoon baking powder
2 teaspoons ground allspice
1 teaspoon fine salt

Steps:

½ cup brown sugar
½ cup water
