GRILLED TILAPIA WITH MANGO SALSA

Grilled Tilapia with Mango Salsa image

Don't let the list of ingredients fool you: this is super-easy, and gets rave reviews whenever I serve it. The salsa can be made the day ahead to save time. Strawberries can be substituted for the mango if you prefer--both are excellent! Combine leftover salsa with some drained black beans the next day for lunch.

Yield 2

Number Of Ingredients 16

⅓ cup extra-virgin olive oil
1 tablespoon lemon juice
1 tablespoon minced fresh parsley
1 clove garlic, minced
1 teaspoon dried basil
1 teaspoon ground black pepper
½ teaspoon salt
2 (6 ounce) tilapia fillets
1 large ripe mango, peeled, pitted and diced
½ red bell pepper, diced
2 tablespoons minced red onion
1 tablespoon chopped fresh cilantro
1 jalapeno pepper, seeded and minced
2 tablespoons lime juice
1 tablespoon lemon juice
salt and pepper to taste

Steps:

  • Whisk together the extra-virgin olive oil, 1 tablespoon lemon juice, parsley, garlic, basil, 1 teaspoon pepper, and 1/2 teaspoon salt in a bowl and pour into a resealable plastic bag. Add the tilapia fillets, coat with the marinade, squeeze out excess air, and seal the bag. Marinate in the refrigerator for 1 hour.
  • Prepare the mango salsa by combining the mango, red bell pepper, red onion, cilantro, and jalapeno pepper in a bowl. Add the lime juice and 1 tablespoon of lemon juice, and toss well. Season to taste with salt and pepper, and refrigerate until ready to serve.
  • Preheat an outdoor grill for medium-high heat, and lightly oil grate.
  • Remove the tilapia from the marinade, and shake off excess. Discard the remaining marinade. Grill the fillets until the fish is no longer translucent in the center, and flakes easily with a fork, 3 to 4 minutes per side, depending on the thickness of the fillets. LAWANNA'S MANGO SALSA ON TILAPIA FILLETS

LaWanna's Mango Salsa on Tilapia Fillets image

A delicious fruity salsa topping to serve over fish or chicken, from a friend in Florida. I always use whatever that I have left in a mixed greens salad the next day. Use any kind of fish -- I use tilapia or salmon. The fish may also be grilled, which is what I prefer. If I can't find a good fresh pineapple, I will use canned pineapple tidbits.

SPICED TILAPIA WITH MANGO BLACK BEAN SALSA

Spiced Tilapia With Mango Black Bean Salsa image

From Fine Cooking's "Cooking Fresh." This salsa is wonderful and versatile. Even though this recipe is for 2 servings, I suggest you make the whole batch of salsa (Recipe #230800) and store it for other dishes. It is obviously easier to make in larger batches. Try this spice rub on chicken or grilled chops as well!

JAMAICAN TILAPIA MANGO SALSA

Categories     Fish     Dinner

Yield 4 people

Number Of Ingredients 16

4 fresh tilapia fillets
1/2 cup extra virgin olive oil
1/3 cup white wine
2 teaspoons Caribbean jerk seasoning
1 tablespoon dried parsley flakes
8 ounce can sliced pineapple in its own juice
Salsa:
2/3 cup chopped mango
2 tablespoons fresh squeezed lime juice
2 tablespoons fresh squeezed orange juice
4 rounded teaspoons jalapeno peppers very finely chopped
4 rounded teaspoons finely chopped red onions
2 rounded teaspoons finely chopped red bell pepper
2 rounded teaspoons finely chopped green bell pepper
1 teaspoon dried parsley flakes
1 teaspoon freshly ground black pepper

Steps:

  • Directions Mix olive oil, wine and parsley then marinate fish in the mixture for 1 hour. Place fish on well oiled hot grill. Sprinkle fish with half of the jerk seasoning and half of the pineapple juice. Baste some of the oil marinade on the pieces of fish. Place pineapple slices on grill as well. Turn fish over and sprinkle with remaining seasonings. Add pineapple juice and oil marinade as on first side. Flip pineapple slices. Serve fish with pineapple slices and top with mango salsa. To make salsa mix all ingredients well and refrigerate for an hour or more before serving.

Tips:

  • For the freshest tilapia, choose fillets that are firm to the touch and have a mild, briny smell. Avoid fillets that are slimy or have an off odor.
  • To ensure that the tilapia is cooked evenly, use a nonstick skillet or a well-seasoned cast iron skillet.
  • Don't overcrowd the skillet when cooking the tilapia. If you're cooking multiple fillets, cook them in batches to prevent them from steaming rather than searing.
  • To make the mango salsa, use ripe mangoes that are sweet and juicy. If you can't find ripe mangoes, you can substitute canned mango chunks.
  • Add a squeeze of lime juice to the mango salsa just before serving to brighten the flavors.
  • Serve the tilapia and mango salsa immediately with your favorite sides, such as rice, beans, or roasted vegetables.

Conclusion:

This Jamaican tilapia with mango salsa is a delicious and easy-to-make meal that's perfect for a weeknight dinner. The tilapia is flaky and flavorful, while the mango salsa is sweet, tangy, and refreshing. Serve it with your favorite sides for a complete meal that the whole family will enjoy.
