Tips:

  • Choose the right cabbage: Green cabbage is the traditional choice for coleslaw, but you can also use red cabbage, Savoy cabbage, or a combination of different types.
  • Shred the cabbage finely: This will help the coleslaw to absorb the dressing more easily. You can use a food processor or a sharp knife to shred the cabbage.
  • Use a creamy dressing: James Beard's recipe uses mayonnaise and sour cream, but you can also use Greek yogurt or buttermilk. If you want a lighter dressing, you can use less mayonnaise or sour cream and more vinegar.
  • Add some sweetness: Sugar or honey can help to balance out the acidity of the vinegar.
  • Season the dressing to taste: Salt, pepper, and celery seeds are all classic seasonings for coleslaw. You can also add other spices, such as cumin or caraway seeds.
  • Let the coleslaw chill before serving: This will allow the flavors to meld together.

Conclusion:

James Beard's horseradish coleslaw is a classic side dish that is perfect for any occasion. It is easy to make and can be tailored to your own taste. With its creamy dressing, tangy horseradish, and sweet cabbage, this coleslaw is sure to be a hit.
