JAMIE'S SPICED SUGAR AND CHRISTMAS POPCORN RECIPE

Jamie's Spiced Sugar and Christmas Popcorn Recipe image

This Jamie Oliver sugar mix really does smell like Christmas (although you are not limited to eating it only at Christmas!). The sugar recipe makes loads, (but is easily halved) and it keeps in an airtight container for absolutely ages and can be used on a variety of things (to sweeten whipped cream, on porridge, on fruit--you name it...), so it's well worth doing a full batch. I don't usually do sweet popcorn, but I like this one!

3 fresh bay leaves
2 oranges, zest of, finely grated
2 lemons, zest of, finely grated
6 whole cloves
1/2 teaspoon ground cinnamon
whole nutmeg (10 gratings)

olive oil
1 slice butter
250 g popcorn

  • SPICED SUGAR:.
  • Put all of the sugar ingredients, except the sugar into a food processor and whiz until well blended and fine. Add the sugar and whiz again to combine everything together.
  • Spread the sugar out on a tray to dry out for a couple of hours before using, as it will be slightly moist at this stage.
  • Once dry, sieve the sugar to catch any large pieces and discard them. Keep the sugar in an airtight container. It will keep for ages!
  • POPCORN:.
  • Put the oil and butter into a pan on high heat. Once the butter has melted, add the popcorn and stir well to coat. Cover and leave to pop, shaking occasionally.

Time 49m

Yield 10 to 12 servings

Number Of Ingredients 16

7 ounces (200grams) butter
7 ounces (200grams) caster sugar
3 large eggs
7 ounces (200grams) self-rising flour
1 rounded teaspoon baking powder
3 rounded tablespoons cocoa powder
2 (250 gram containers) ricotta cheese (about 19 ounces)
Around 2 3/4 ounces (80 grams) sugar
1 handful of mixed glace fruit
1 tin cherries, drained
4 ounces (100 grams) chocolate, broken up
1 handful flaked or shaved or thinly sliced almonds
2 heaping tablespoons good coffee beans, crushed
2 egg whites
A good drizzle orange liqueur
Cocoa powder for dusting

Steps:

  • Preheat oven to 350 degrees F.
  • Line 2 (10-inch) (25 centimeters) cake tins with greaseproof paper and rub with a little butter. In a mixer, beat the butter and sugar together until fluffy. Add the eggs, flour, baking powder, and cocoa powder. Mix well and divide into the cake tins. Cook for 7 to 8 minutes at 350 degrees F (180 degrees C/gas 4) until firm but soft.
  • So, you have 7 to 8 minutes, while the sponge is cooking, to make the filling. Add the ricotta to a food processor and blitz with the sugar until shiny and smooth. Scoop into a bowl, add the chopped fruit, cherries, chocolate, and almonds and stir together. Now add the coffee to taste (bash the hell out of the beans using something heavy wrapped in a tea towel, or use a coffee grinder if you don't like too much noise?). Whip up the egg whites and fold into the ricotta mix.
  • By now, the sponge is probably ready. Turn it out while it is still hot and cut it into 8 wedges. Line a shallow round bowl, about 9-inches (23 centimeters) across, with two sheets of cling film, making sure it fits the shape of the bowl. Then fit half of the sponge pieces neatly around the insides of the bowl (as you would if you were making summer pudding).
  • Drizzle with liqueur, then pour in the ricotta mixture. Level it out, then place the remaining sponge over the top. Drizzle again with liqueur. Pull the cling film over the top and weigh it down with some plates, pushing down on them before placing in the freezer for at least 4 hours. Serve this 'semi freddo' (semi frozen), dusted with cocoa powder and sliced into wedges. If it's very frozen then that's fine; just pull it out of the fridge when dinner is served so it can slowly thaw as you are eating.

CAJUN-SPICED POPCORN

Cajun-Spiced Popcorn image

This recipe came from Alan (my best friend in college). His parents are from Louisiana and this was his mom's recipe. We used to have poker parties all the time and this was one of our favorite things to serve. Popcorn is cheap, so we made a lot of different flavored popcorns.

Yield 3 quarts

Number Of Ingredients 8

3 quarts popped popcorn
1/4 cup butter, melted
1 teaspoon chili powder
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1/4 teaspoon cayenne pepper
1/4 teaspoon salt
1/8 teaspoon lemon pepper

Steps:

  • Mix in reserved popcorn. Serve immediately or store in airtight container.

Tips:

  • Microwave Method: Microwave popcorn in a single layer in a microwave-safe bowl on high for 2-3 minutes, or until popping slows to 2-3 seconds between pops.
  • Stovetop Method: Heat oil and popcorn kernels in a large pot over medium heat, shaking the pot frequently. Once popping begins, continue shaking until all kernels have popped.
  • Add-Ins: Enhance popcorn flavor with melted butter, salt, herbs, spices, cheese, chocolate, or caramel. Explore different combinations to create unique and delicious variations.
  • Microwave Spiced Sugar: Combine sugar, spices, and salt in a microwave-safe bowl. Microwave on high for 30 seconds, stirring in between, until fragrant and slightly caramelized.
  • Stovetop Spiced Sugar: Mix sugar, spices, and salt in a saucepan over medium heat. Stir continuously until sugar melts and turns golden brown.
  • Christmas Popcorn: Combine popcorn, spiced sugar, dried cranberries, almonds, and white chocolate chips in a large bowl. Toss to coat popcorn evenly.
