RED HOT SLAW
This is a fabulous wilted bacon cabbage slaw with a beautiful, bright color that is really delicious. (You can use green but the color isn't as vibrant, obviously.) Even our 3 year old loved it! And it is super easy with (probably) things you'd have in your kitchen. Easy and wonderful presentation AND delicious.

Tips:
- Choose the right cabbage: For the best results, use a firm head of green or red cabbage. Avoid using Savoy cabbage, as it has a looser texture and will not hold up as well in the slaw.
- Shred the cabbage finely: This will help the slaw to absorb the dressing more evenly.
- Use a sharp knife or mandoline to thinly slice the onion: This will help to prevent the onion from overpowering the other flavors in the slaw.
- Toast the caraway seeds: This will bring out their nutty flavor and add a nice crunch to the slaw.
- Use a good quality mayonnaise: This is the base of the dressing, so make sure to use a brand that you like the taste of.
- Add some vinegar to the dressing: This will help to balance out the richness of the mayonnaise and add a bit of tang.
- Season the dressing with salt and pepper to taste: This will help to bring out the flavors of the other ingredients.
- Chill the slaw before serving: This will help the flavors to meld and make the slaw even more refreshing.
