JELLO CHOCOLATE PUDDING FUDGE
This was the best quick Fudge I have ever made and I added nuts to mine although the recipe did not call for the nuts.

Steps:
- Microwave 4 of the chocolate squares, 6 TBSP of the butter and water in large microwaveable bowl on High for 2 minutes or until butter is melted, stir. Add dry pudding mix; stir until well blended.
- Add powered sugar, 1 cup at a time, stirring until well blended after each addition. Press into foil lined 8 inch square pan.
- Microwave remaining 4 chocolate squares and 2 TBSP butter in large microwaveable bowl on High 1 1/2 minutes or until butter is melted. Stir until chocolate is completely melted. Spread over pudding mixture. Refrigerate 2 hours or until firm.
- Store cut-up fudge between sheets of wax paper in airtight container in refrigerator up to 2 weeks.
- Yields 24 servings, 2 inch squares each.
JELLO SHOTS: CHOCOLATE FUDGE RUM CHATA PUDDING
I tried these last night at a Christmas party and just HAD to get the recipe before I left. Super easy and oh so delicious! They taste just like chocolate mousse. I'm not exactly sure how many shots this makes, it all depends on the size of plastic shot glasses/containers used. I'm making a batch tonight, just for fun, but I'm going to fill parfait glasses with it for a Christmas eve dessert (for the grown-ups). I will make it the same way for the kids, only a "virgin" alternative, replacing the booze with more milk. I hope you enjoy! *Note: If you've never heard of "Rum Chata", just google it. It's a rum liqueur. (The stupid ingredient list keeps posting it incorrectly). I've drank "Rum Chata", before as a sipper, but I've also been told that it's great as an alternative to creamer in your morning coffee for a quick "hang-over" cure.

Steps:
- Combine first 3 ingredients in a medium bowl. Beat with a wire whisk or electric blender on low for 1 - 2 minutes. Let stand for 5 minutes to soft-set.
- Gently fold in whipped topping (that has been thawed in the fridge). Once fully incorporated, divide the mixture amongst plastic shot glasses, line them on a tray and place the tray in the freezer until ready to serve (they will not freeze solid because of the alcohol).
- Enjoy! -- "Please Drink Responsibly".
- Use a double boiler to melt the chocolate chips and butter. This will help prevent the chocolate from burning.
- If you don't have a double boiler, you can melt the chocolate chips and butter in a microwave-safe bowl. Microwave on high for 30 seconds at a time, stirring in between, until the chocolate is melted and smooth.
- Make sure to use a heatproof bowl when melting the chocolate chips and butter. This will prevent the bowl from cracking or melting.
- If you want a richer fudge, use dark chocolate chips. You can also use milk chocolate chips or a combination of dark and milk chocolate chips.
- Add a pinch of salt to the fudge. This will help balance out the sweetness of the fudge.
- Stir in your favorite mix-ins, such as nuts, dried fruit, or candy, after the fudge has been removed from the heat.
- Pour the fudge into a greased 8x8 inch pan. If you want thicker fudge, use a smaller pan.
- Refrigerate the fudge for at least 2 hours before cutting and serving.
