These flavorful chicken breasts are grilled to perfection, then topped with a sweet and spicy, colorful pineapple salsa. The dish is mildly spicy, however you can adjust the amount of jalapeno to suit your tastes. Use your favorite brand of seasoning and adjust the salt right before serving, as some brands are saltier than others.

1 small jalapeno pepper, seeded and minced
2 tablespoons minced red onion
2 tablespoons minced fresh cilantro
1 tablespoon lime juice
¼ teaspoon salt

JEN'S FRESH AND SPICY SALSA

Jen's Fresh and Spicy Salsa image

JENN'S FAVORITE CHICKEN

Jenn's Favorite Chicken image

Scrumptious quick chicken dish. I had lots of ginger and a jar of pineapple salsa that I couldn't decide what to do with and here we are!

Provided by MythThyng

Categories     Chicken

Time 45m

Yield 4 serving(s)

Number Of Ingredients 8

4 chicken breast halves (2 whole breasts)
8 ounces newman's own pineapple salsa (or other brand)
2 cups vegetables or 2 cups chicken broth
1/4 cup flour
1/8 cup olive oil (approximately)
1/2 teaspoon fresh ground white pepper
1/2 teaspoon ground ginger
1/4 teaspoon salt

Steps:

  • In a plastic freezer bag, or between 2 sheets of plastic wrap, pound each halved chicken breast until about 1/4 inch thickness.
  • (It helps to sprinkle the chicken or the plastic wrap with a little water so you don't tear the meat).
  • Mix together the flour, pepper, ginger, and salt on a shallow dish.
  • Dredge the chicken breasts in the flour mix to coat.
  • Heat the olive oil in a sautee pan over medium heat.
  • Place 1 breast at a time in the pan and cook about 3 minutes per side, or until the meat feels firm.
  • Keep chicken in a covered dish to warm until all the chicken is finished cooking.
  • Add the broth to the pan slowly.
  • The pan will steam up so be careful.
  • Deglaze the pan by gently scraping up any browned bits and let the liquid simmer for about 5 minutes until reduced slightly.
  • Add your salsa and stir until you have a nice thick sauce.
  • It will come out to be a bit brownish in color.
  • Take the pre-cooked chicken breasts and place back into the pan and reduce heat to medium-low.
  • Turn chicken once after 2 minutes and cook an additional 2 minutes.
  • Remove chicken from pan and serve with 2-3 Tblsp of sauce over each breast.

Tips:

  • Choose ripe pineapple: Using ripe pineapple ensures a sweeter and juicier salsa. Look for pineapples with a golden yellow color and a fragrant smell.
  • Use fresh cilantro and jalapeño: Fresh herbs and spices elevate the flavor of the salsa. If using dried cilantro, reduce the amount by half.
  • Adjust the heat level: If you prefer a milder salsa, remove the seeds from the jalapeño before dicing. For a spicier salsa, leave the seeds in.
  • Chill the salsa before serving: Chilling the salsa allows the flavors to meld and develop. Serve it chilled for a refreshing and tangy accompaniment.
  • Use a variety of chicken: The recipe calls for boneless, skinless chicken breasts, but you can also use thighs or tenderloins. Adjust the cooking time accordingly.
  • Experiment with different toppings: Top the chicken with your favorite toppings, such as shredded cheese, sour cream, guacamole, or salsa. You can also add a side of black beans or rice for a complete meal.

Conclusion:

This Pineapple Salsa Chicken is a flavorful and versatile dish that's perfect for any occasion. The combination of sweet pineapple, spicy jalapeño, and savory chicken creates a delicious and refreshing meal. Whether you're serving it as an appetizer, main course, or side dish, this recipe is sure to be a hit. So, gather your ingredients, put on your apron, and get ready to enjoy this tropical twist on a classic dish!
