JENNY'S GRILLED CHICKEN BREASTS

Jenny's Grilled Chicken Breasts image

This is the recipe that my friends and family still beg me to make when the grill is brought out. It's so easy and versatile, and can be tried on several different meats. I like it with scalloped potatoes, baked potatoes or rice pilaf. Try it with cilantro or oregano instead of parsley. Save leftovers for salad the next day.

LIME-GINGER GLAZED CHICKEN WITH FENNEL RELISH

Lime-Ginger Glazed Chicken With Fennel Relish image

Unfortunately I can't remember where I got the original recipe for this, but made some edits of my own when The Beau and I had an out of town guest. I doubled the recipe, as it looked so good I knew I was going to want some the next day. Instead of cooking the chicken in a skillet, I grilled it on the barbecue, but reduced the glaze on the stove. To my dismay, the three of us gobbled it all up and there weren't any leftovers! I do love fennel immensely and have tried the relish with grilled fish, which was wonderful. One time I also added fresh corn cut from the cob to the relish, a great addition.

This recipe came from Weber and the original recipe used Cornish Hens but DH used a fryer that we had in the freezer. We loved the distinctive flavor of the lime and rosemary. If you want to use Cornish Hens you will need two for this recipe.

Tips

  • Prep the chicken: Rinse the chicken pieces under cold water, pat them dry with paper towels, and remove any excess fat or skin. This will help the chicken cook evenly and absorb the marinade better.
  • Marinate the chicken: The marinade for this recipe is a blend of lime juice, garlic, cilantro, olive oil, cumin, paprika, and salt. Mix all the ingredients in a bowl or large Ziploc bag, add the chicken pieces, and let them marinate for at least 30 minutes or up to overnight. The longer you marinate the chicken, the more flavorful it will be.
  • Cook the chicken: Preheat your oven to 425 degrees Fahrenheit (220 degrees Celsius). Place the chicken pieces on a greased baking sheet or roasting pan and bake for 20-25 minutes, or until the internal temperature reaches 165 degrees Fahrenheit (74 degrees Celsius) as measured with an instant-read thermometer.
  • Make the lime glaze: While the chicken is cooking, prepare the lime glaze. In a small bowl, whisk together the lime juice, honey, and cornstarch until smooth. Set aside.
  • Glaze the chicken: After the chicken is cooked through, remove it from the oven and brush it with the lime glaze. Return the chicken to the oven and broil for 2-3 minutes, or until the glaze is bubbly and slightly caramelized.
  • Garnish and serve: Garnish the chicken with fresh cilantro and lime wedges for added flavor and presentation. Serve the chicken immediately with your favorite sides such as roasted vegetables, mashed potatoes, or a fresh salad.

Conclusion

Jenny's Lime Glazed Chicken is a simple yet delicious dish that is perfect for any occasion. The marinade infuses the chicken with flavor, while the lime glaze adds a bright and tangy touch. This recipe is easy to follow and can be made with ingredients that are easily accessible. So next time you're looking for a tasty and hassle-free meal, give Jenny's Lime Glazed Chicken a try. You won't be disappointed!
