3 cups all-purpose flour
½ teaspoon salt
2 ½ teaspoons baking powder
2 cups white sugar
1 cup vegetable oil
4 eggs, beaten
¼ cup orange juice
2 teaspoons vanilla extract
3 apples - peeled, cored and sliced
2 teaspoons ground cinnamon
5 teaspoons white sugar

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour one 10 inch tube pan. Combine the ground cinnamon and 5 teaspoons of the sugar together and set aside.
  • In a large mixing bowl, combine the flour, salt, baking powder and 2 cups of the sugar. Stir in the vegetable oil, beaten eggs, orange juice and vanilla. Mix well.
  • Pour 1/2 of the batter into the prepared pan. Top with 1/2 of the sliced apples and sprinkle with 1/2 of the cinnamon sugar mixture. Pour the remaining batter over the top and layer the remaining sliced apples and cinnamon sugar.
  • Bake at 350 degrees F (175 degrees C) for 70 to 90 minutes.

2 cups sugar
4 eggs
1 cup salad oil
3 cups flour, sifted
3 teaspoons baking powder
1/2 teaspoon salt
1/2 cup orange juice
1 1/2 teaspoons vanilla
4 large granny smith apples or 4 large golden delicious apples
4 teaspoons cinnamon
1 cup sugar
1/2 cup walnuts, chopped (optional)
2 tablespoons lemon juice (optional)

Steps:

  • Toss the apples with lemon juice to prevent darkening.
  • Cake Batter:.
  • MIx dry ingredients, including 2 cups sugar.
  • Make a hole in center and add eggs, juice, oil and vanilla.
  • Beat with mixer for 2 minutes. The batter will be thick.
  • Pour half of the batter into greased and floured 10 inch tube pan. Arrange half the apples over the top of batter and sprinkle with cinnamon and sugar which have been mixed together. You can add 1/2 cup chopped walnuts if desired. Cover with remaining batter and top this with remaining apple slices and sprinkle the same way with the sugar-cinnamon-nut mixture. Bake for 1 hour and 20 minutes to 1 and 1/2 hours at 350 degrees.
  • Allow the cake to cool in the pan for 25 minutes.

1 tablespoon lemon juice
6 tablespoons vanilla sugar
1 tablespoon cinnamon
1/8 teaspoon ground cardamom
2 3/4 cups sifted flour
3 teaspoons baking powder
1/4 teaspoon salt
4 eggs
2 cups vanilla sugar
1 cup oil
1/3 cup orange juice
