1 Tbsp. Dijon mustard
1 Tbsp. brown sugar

JIMMY'S SMOKED HAM

Jimmy's Smoked Ham image

It doesn't get better than hickory smoked! We have hickory trees on our property so we cut our own. It's fun taking a stroll in the woods to look for hickory especially when all the leaves have fallen from the trees. Jimmy built a very unique smoker/grill, you can smoke several pieces of meat at one time. BTW you don't have...

Time 5h

Number Of Ingredients 5

1 10-lb uncooked ham
1 or 2 2 liter coke
seasoning salt
hickory
charcoal

Steps:

  • 1. Remove ham for refrigerater. Place in a large pot with coke and seaoning salt. Soak for 3 to 4 hours. NOTE: I soaked over night in the fridge.
  • 2. Meanwhile soak hickory in water. NOTE: we cut our own hickery and soaked over night.
  • 3. Place coals in smoker and fire them up. Once hot; place ham in smoker; add wet hickory on top of burning coals (this will smoke and that's what you want it to do). Add additional coals as needed.
  • 4. Smoke for about 5 hours. Slice and serve. NOTE: If you are unsure of the status of your smoked ham, then heating the ham until the internal temperature reaches 160 degrees will ensure that it is safe to eat. Tips:

  • Choose the right ham: Opt for a bone-in ham for better flavor and moisture. If using a boneless ham, wrap it in cheesecloth soaked in water or apple cider vinegar to prevent it from drying out.
  • Prepare the ham: Remove the rind from the ham, leaving a thin layer of fat. Score the fat with a sharp knife to help the glaze penetrate.
  • Create a flavorful glaze: Combine brown sugar, honey, mustard, and spices to create a delicious glaze. You can also add a splash of orange juice or pineapple juice for a fruity twist.
  • Smoke the ham: Smoke the ham over indirect heat at a temperature between 225-250°F (107-121°C) for several hours, or until the internal temperature reaches 140°F (60°C) for a medium-rare ham or 160°F (71°C) for a fully cooked ham.
  • Baste the ham: During the smoking process, baste the ham with the glaze every 30-45 minutes to keep it moist and flavorful.
  • Rest the ham: Once the ham is cooked, let it rest for at least 30 minutes before carving. This allows the juices to redistribute throughout the meat, resulting in a more tender and flavorful ham.

Conclusion:

Smoking a ham is an excellent way to infuse it with smoky flavor and create a delicious and juicy dish. By following these tips and using the provided glaze recipe, you can easily smoke a ham to perfection at home. Whether you prefer a medium-rare or fully cooked ham, the smoking process allows you to control the doneness and create a ham that meets your preferences. Enjoy your homemade smoked ham as the main course for a special occasion or as part of a delicious sandwich or salad.
