2 pounds chopped beef chuck or round
1 onion
1 tablespoon heavy cream
Freshly ground black pepper
Unsalted butter
Vegetable oil, as needed
Kosher salt, to taste

Steps:

  • Spread the meat out on a board and grate 2 to 3 tablespoons of onion into it¿use a fairly fine grater so you get just the juice and very finely grated raw onion. Now mix in about a tablespoon of heavy cream and some freshly ground black pepper, to taste. Form into patties¿a 6- to 8-ounce patty for an average serving.
  • Using a black iron skillet or your best copper one or your pet aluminum frying pan, Teflon-coated or not (with a Teflon coating you won't need much fat, just a little bit for flavor), and cook the hamburgers in the butter and oil over fairly high heat, giving it 4 to 5 minutes a side, depending on how well done you like it. Salt this creamy, oniony, peppery hamburger before serving it on a buttered bun or English muffin, or as a main course with sliced tomatoes and onions or some home-fried potatoes.

I've always eyeballed the seasonings, and relied on the hot sauce, so do adjust to your taste (add more seasonings if you don't use hot sauce or ketchup)!

1 lb ground beef
8 ounces brown button mushrooms, quartered
8 ounces frozen chopped spinach, well drained
3 tablespoons olive oil
1 onion, chopped
3 garlic cloves, minced
1/4 cup dry red wine
1 teaspoon salt
1/2 teaspoon fresh coarse ground black pepper
2 tablespoons italian seasoning
1 teaspoon garlic powder
1 tablespoon Worcestershire sauce (eyeball it)
2 eggs, lightly beaten

Steps:

  • Heat skillet, sautee chopped onions until softened, add garlic.
  • Meanwhile, in another skillet, heat and add olive oil, add mushrooms and sautee a few minutes. Season with some salt and pepper, add red wine. Simmer with lid slightly open.
  • Add ground meat to the onions, season with salt, pepper, Italian Seasonings, garlic powder, and brown the meat.
  • When meat is almost cooked through, add spinach and the entire skillet of mushrooms and juices, add worchestershire. Cook through. Turn heat to low and add eggs, stir and cook until set. Adjust seasonings to taste.

1 sweet onion, chopped
1 green bell pepper, chopped
4 cloves garlic, peeled and crushed
1 tomato, chopped
2 tablespoons steak sauce
2 pounds ground beef
¼ cup dry bread crumbs
salt and pepper to taste

Steps:

  • Preheat an outdoor grill for high heat and lightly oil grate.
  • In a blender or food processor, gradually place sweet onion. green bell pepper, garlic and tomato. Blend into a thick liquid. Mix steak sauce into the mixture.
  • Pour the blended mixture into a large bowl. Place ground beef into the bowl, and thoroughly mix together. Set aside approximately 15 minutes.
  • Mix again if liquid is present, then gradually introduce dry bread crumbs until the ground beef mixture is firm enough to form hamburger patties. Salt and pepper to taste.
  • Form the ground beef mixture into hamburger patties. Cook on the prepared grill to desired doneness.
