- Mix dry ingredients together well. Add wet ingredients and mix. Batter will be thick. Turn onto floured surface and knead several times or beat batter in bowl several times with a wooden spoon. Turn into a greased 8" round or square pan (can use an iron skillet). Dip fingers into flour and pat down dough. Prick top with a fork and brush with half of melted butter. Bake @450F for 25 minutes or until light golden brown. Brush with remaining melted butter. Cool slightly and serve warm or at room temp.

- 1. Combine dry ingredients and cut in the butter until pea sized. Add milk to make a soft dough and knead until smooth. Let dough rest for about 10 minutes.
- 2. You can use either of these cooking methods: Heat a cast iron skillet on very low to medium low heat on the stove top and grease well. Roll out the dough into a disk that neatly fits in the pan. Grill on each side about 10-15 minutes being careful not to burn it. Flipping it is a challenge. I used 2 spatulas in tandem. Check for doneness and cut into wedges and eat. This is how they do it in the Bahamas.
- 3. OR place the dough in a greased 8 or 9 inch round or square pan. Pierce the top with a fork and bake at 350 for 20-25 minutes. Remove from oven and brush with milk, return to oven and bake for 5 minutes more. Then EAT IT.

- Mix all the dry ingredients together, then cut in the shortening. Work the mixture with your hands until the grains are about the size of rice.
- Add milk until you get a soft dough (I had to use a bit more than the recipe called for).
- Turn out onto a floured surface and knead until smooth.
- Let the dough rest for 10 minutes, then transfer it to a greased 9x9 inch pan. You will have to press it down so it fills in all the corners. Poke the top of the dough a few times with a fork.
