5 cups old-fashioned rolled oats
1 cup olive oil
1 cup pure maple syrup
1 teaspoon kosher salt
1 cup raw almonds
1 cup raw walnut halves
1 cup bittersweet chocolate chunks, such as Scharffenberger 70%

Steps:

  • Preheat the oven to 350 degrees F. Line a rimmed baking sheet with a piece of parchment paper and set aside.
  • In a large bowl, mix together the oats, oil, syrup and salt. Toss well to coat evenly. Spread the mixture on the prepared baking sheet and bake for 30 minutes, stirring halfway through. Remove the baking sheet and stir in the almonds and walnuts. Bake, stirring halfway through to brown evenly, an additional 25 to 30 minutes. Let cool completely, then stir in the chocolate chunks.

1/2 cup shredded coconut
1/2 cup chopped pecans
1/2 cup honey
1/4 cup raw unsalted sunflower seeds (optional)
1/4 cup butter or 1/4 cup margarine, melted
2 teaspoons grated orange peel
1 teaspoon vanilla
1/2 teaspoon ground cinnamon
1/4 teaspoon salt (optional)
1 1/3 cups dried cranberries

Steps:

  • Heat oven to 350°F Combine all ingredients except cranberries in large bowl; mix well. Spread evenly in 15 x 10-inch jelly roll pan.
  • Bake 40 minutes or until golden brown, stirring every 10 minutes.
