This banana bread can be tweaked to be either more like a dessert or more of a healthy breakfast loaf. Just depends on which yummy add-ins you want to use. Also, I use part unbleached bread flour, and part whole wheat flour to make it a bit healthier but still smooth.

1/3 cup soft butter
3 very ripe bananas
1 3/4 cups flour (great with part whole wheat flour)

1/4 cup flax seed (optional)
1/3 cup raisins (optional)

When I went off to college, my Grandma mailed me a loaf every couple weeks. (I even fell down my dorm stairs one time rushing down to pick up my package containing banana bread.) It has been six years or so since she passed. Now, when I miss her terribly, I bake loaf after loaf of her bread and give it away to share the joy I felt every time I received her special packages.

1 1/2 cups flour
1 cup sugar
1/2 teaspoon salt
1 teaspoon baking soda
1/2 cup shortening

2 bananas (very, very ripe and I mean the blacker the better!!)
